I guess, even though I heard about people wanting this back in XI (and I was one of them..) it was kind of a rare thing for me to run into someone who said they also wanted the other genders added. Though at that point I think most people had given up on asking SE. I didn't think there were so many of us. :x
I'm surprised at our numbers I guess. And this is just here on the forum.. there must be many other people out there who want it but haven't posted. Seeing the Community Rep post in character creation options makes me wonder if we're next.
Perhaps we are just being left until more important things are being answered.

I have to thank Square-Enix for the amazing job they have done recreating Final Fantasy XIV from Scratch. Especially the inclusion of Missing Genders which we petitioned for in good faith. This was proof to us players that the Developers are truly Sympathetic to our requests and that being honest and vocal can pay off with the amazing characters we have who are Female Roegadyn, Male Miqote, and Female Highlanders. Thank You SE, Thank You Community Team, Thank You Yoshi-P.
So do I, I'd be happy with a message from a community rep. it would definitely be a step closer to a answer.

I am in favor of having all race/gender combos.

If you asked me this in FFXI, I would say hell no. They have reasons for it in the Lore in FFXI, so I would be against adding them (and it would make the one NPC from the Wings of the Goddess expansion much less cool)
I'm not sure if the Lore is the same in FFXIV. I haven't found anything personally, but I haven't really looked either. If the Lore is the same ("manthra" are extremely rare and kept caged back home, and Roegadyn are asexual), then I would be against it. If they don't plan on keeping that lore, however, I wouldn't have a problem with it.

Female Roegadyn - Some are Prominent members of society and high in political and Financial circles. Also known to be quiet beautiful. Have higher business sense then the males seem to have.
Female Hyur Highlander - Most chose to stay near/around Ala Mihgo to help try and salvage and rebuild it while the males went out looking for help from the rest of Eorzea.

Ahh, sorry 'bout that. The first post was kinda a wall of text, so I didn't click on all the links.
By the sounds of the lore, it seems they are purposefully leaving it open to add them at a later date. I wouldn't have a problem with them adding it, but I don't want them to add them just because people whined about it. If they planned to not have them for the purpose of later expansions (like the NPC in Wings of the Goddess), then I would be against it. I guess I just side with SE on this one. If they're ok with releasing them, then yay. If they feel they're being "forced" into releasing them, then I'm against it.
