There is a part of me that is worried that they are rushing the story to finish in 6.0 instead of the original plan for 7.0 to get to the next story arch as soon as possible and that this might make some of the plot points in the Hydalyn/Zodiark feel rushed or anti-climatic. the recent Bojza storyline supposedly concluding the Dalmascus storyline as well in a field note has me even more concerned that some plot points tied to the previous arch will just be cut off. the two new raids dealing with previous plot points has given me some reassurance that some plot points may take the entire expansion to wrap up.
I am also a tad worried that doing multiple major locations that have been hinted at for years in one expansion will not do them the justice they deserve. I feel that Garlemald and Sharylyan probably were originally going to get their own expansions before having to share and so far it does not feel like there are a ton of zones associated with them. Garlemald especially has me concerned as it only has one zone and that does not feel like enough to do it justice. I might be wrong and they might make up for it by making it an absolutely massive zone larger then any other to date, the benchmark put a big focus on it helps back this up and on the expansion page they make a point of massive zones. Still I hope it at least gets a Doma enclave restoration quest with the Iron works to further flesh it out and even though it is destroyed I do hope it is a more urban zone that is to say that there is more areas inside the ruined city then out in the snowy wastes, we already have snowy zones. I know I have made mention before in the past that I got tired of fighting the same enemies and wanted to see new antagonists and storylines but I do not want it to be at the expense of the storylines set up for over 10 years now.
Other small wishes would be for healers to be fixed with the addition of sage instead of messed up and for female Viera to get some more hairstyles and for both genders to wear most headgear.
I do not want it to seem like I am complaining or doubtful as I have nothing for respect for Yoshi P. and his team, in fact he is one of the few game developers I actually both trust and respect in this day and age and he appears to have helped reform more of Square Enix in recent years as well with the production of FF XVI compared to FF XV being an obvious example but I just had some concerns with the storyline concluding sooner then originally planned and how healers and Viera were handled in ShB.
It's only a small bit of your post but there's some positive news on this front. In the last live letter, when they showed off the new AF sets, they showed a female Viera Ninja with what appeared to be one of the unlockable hairstyles and Yoshi mentioned as an aside that they would be getting more hair options. No clarification on if this includes male ones or how extensive it'll be but it's something.
My biggest wish for Endwalker that will likely never happen, is Z-Axis control added to house decorating interface. Failing that I'd still be ecstatic if we could put all "floor only" furnishings on lofts instead of just tabletop items. That would be a round about way of giving us Z-Axis control without glitching.

Open the Stormblood and Shadowbringers tome vendors earlier. Maybe Stormblood could open when we return from Doma, and Shadowbringers after we chase Vauthry out of Eulmore. We can easily hit the level caps long before hitting the end of the expansion, let us blow our Poetics earlier too.

It’s a good thing not to answer your enemies. I scarcely ever do. Perhaps Emily is more like me than I am like myself. Perhaps she would rather not answer her friends, even. She keeps it all in her heart.
2.5 was their idea of "short". The beta launched with a 3-second GCD, after all.
But, yes, it is kind of shocking that they've never even seemed to consider swapping over to a 2-second or even 2.25 second (10% Haste baseline) GCD and improved oGCD queuing (or, allowance for more than one queued oGCD per GCD gap) in turn.
If one had effectively no latency (it fell into the queuing period during the prior animation), we could actually still triple-weave so long as the GCD were above 1.8 seconds.
Give me difficult 4 man content that is OPTIONAL and isn't yet another iteration of deep dungeons. Feel like I gotta bold this because some of y'all like to come in shouting "But what if they make it mandatory!?"
Palace of the Dead and Heaven on High aren't mandatory for anything other than the rewards they offer, even the Shadowbringer relics can be worked on via fates, alliance raids, dungeons, normal raids and Bozja.
More engaging and repeatable normal content...
