Expect to be routinely kicked from content past level 30 then, for obstructing gameplay.
Because that is what you will be doing.
Assuming that your character you're roleplaying also never leaves Eorzea, or enters Coerthas, or battles any primals outside of the ARR story ones, sure go for it.
I'd personally give you a little more leeway than level 30, maybe level 40 or so, but that's about it.

I just don't get why the site would list it as a valid option if it is just going to get me kicked from everything >_>
It's a 'valid option' to enter most dungeons wearing no gear but your weapon, or any content with entirely broken gear, that doesn't stop it being a huge detriment to your ability to play the game.
The way jobs have evolved, means that MOST of your kit is in your job, not your class.
Not equipping your soulstone means not having your job, you may as well fight as a Botanist.

Back in ARR and Heavensward, classes could use cross-class skills from any other class (assuming they were leveled up, of course), so you had Marauders being able to use Cure and Stoneskin from Conjurer, etc...just... according the official site it should be okay:

Classes are suited to those who desire versatility, as they allow the use of actions that belong to other disciplines. In contrast, jobs grant access to exclusive actions and are ideal for situations that demand well-defined roles. Which fighting style you adopt is entirely up to you.
????
These capabilities, however, were removed in Stormblood and further polished in Shadowbringers into the system we have now, so that "adaptability" classes used to have over jobs is gone. The page just doesn't reflect said changes for some reason.

The game was originally designed to work that way, but has moved in a different direction. Classes right now no longer have any advantages over jobs.
As far as leveling CNJ without the stone, you can level exclusively in sub 30 content. That can get you to at least 50. I imagine that after that XP would come pretty slowly but then you won't get any skills past that point anyway. If you do want to level beyond 50, maybe do it with an RP group?
You could easily run PotD up to level 60 with no job stone and no one will bat an eye.The game was originally designed to work that way, but has moved in a different direction. Classes right now no longer have any advantages over jobs.

As a CNJ, your healing skills are forever limited to Cure I/II and Medica I/II with your dps limited to Aero II/ Stone II. No aoe. Not a single instant/ oGCD heal. I imagine it's a lot of fun for your groups at higher level...
I'm kind of tempted to grab three friends and try healing some higher level leveling dungeons or experts as a CNJ.
