The biggest issue with Garleans is they cannot use magic. That would be a problem lorewise in a game where everyone can play any job. The inability to use magic was the driving force for Garleans to develop Magitek, and their early national story that they were victims of every other race until they became stronger and started conquering.
Personally, I want to see Viking as a tank job. The game needs more shield using jobs, and more blunt weapon jobs, and Vikings in their rare appearances use hammer and shields.
There's a number of options but Blue Mage DPS (Watch Alphinaud expecially since Alisae is RDM), Dancer (Healer from FFXI experience + Thavnarian influence would match its backround) and what people call "Soldier" (Personally Magitek Knight would be more fitting to this games lore + NotGaius is pretty much tanky type). Could also be Geomancer as a healer since some lore already exists for it though design wise it would have to be different enough to distinguish it from WHM/CNJ.
As for race's obviously Viera is the front runner right now since it's the most human like though we could have a wild card yet. Ronso while a possibility would be less likely since they would possibly be asthetically close to the Miquote. Could also be a complete unique race like the Au Ra too.
A while ago, I had read something that implied the area that Garlemald rests has little to no aether, resulting in extreme weather severity and shifts. For all that we know, the true reason they can't use magic is because of the area they call home and never learned to harness it. That, or the magic they possess is simply too different (as it is, we have seen Ascians wield magic both familiar and unfamiliar to our heroes). Least we forget, Garleans didn't develop magitek so much as they stole knowledge of it in lost information of Allag, even while magitek is the combination of magic and machinery. Curiously, the Garleans lacked magitek until Solus (1513 of the sixth astral era) and discovery of ceruleum (which is just draining the aether from a crystal - unaspected crystals are supposedly the product of crystals that have had their aether drained).The biggest issue with Garleans is they cannot use magic. The Burn is supposed to be devoid of aether, yet we can spellcast, as well as saw those Ascian Hunters casting there as well. There's still a few patches for story to develop that could potentially address this (or the expansion itself if Garleans were to be one of the two races) to still render this plausible. As it were, I'd have never predicted Garleans to recreate and place the echo into others as it were, which is what we've seen here in Stormblood. Or able to extract our souls from our body.
I'm hoping for the Ivalice Moogles because it's an ambitious and creative choice for a new race, just as Blue Mage would be as a class job. I would actually get really excited at starting an alt as a moogle, just to see how different the experience would be as one since I've never really had the chance since Tactics Advance to play as one.
That said, given how lazy some of the new content has been, I get the distinct impression it's just going to be Viera cause that's the easiest to implement (just add rabbit ears!), and Soldier/Commando will be the new job because that'll take the least effort (cause gunblades and their emotes are clearly already assets in the game). Though I'll admit being able to play as Lightning job with a gunblade would be somewhat interesting, but my hype for it is low.

I'd really rather they update the existing race options rather than add a new Hyur with <insert animal ears here> slapped on... Like they could literally add a new tail and ear slot for equipment and that'd be just as good as any new race IMO, potentially better even... You can be a hulk with cat features or a potato with cat features, that's better than the current Miqote option IMO... You could have rabbit ears and a lizard tail to be some freakish hybrid... Can do so much more with that than just a static "Here's Viera" addition...
As for Jobs... I'm hoping for 3 DPS in all honesty, just to flesh out the existing gear sets... Right now we have 3 mages all sharing casting sets, 1 on scouting set, 2 on aiming set, 2 on striking an 1 on maiming... I expect Blue Mage to mirror Red Mage, and move both of them over to a new "Fencing" set of INT gear (so 2 on that, 2 on the old casting). Dancer to go on scouting with Ninja, and something to go on maiming with Dragoon. That way there's be 2 jobs per DPS set and my OCD can be satisfied. I very much doubt that'll happen, but one can dream...
I'd really like Beastmaster too though, for similar reasons... Right now we have healer/tank/melee/caster/ranged, and 3 pet jobs spread out across those roles (Scholar for healer, Summoner for caster, Machinist (lol) for ranged), so we need a tank and melee pet class IMO. Beastmaster I think could work for either honestly, just have the pet play support rather than direct tank if it's a tank, perhaps with cover-style skills to help mitigate. Yoshida doesn't seem to like pet jobs though, shame. Wouldn't mind seeing Hellfire Frog being expanded and adjusted on Ninja to call it a pet job in the same sense Machinist is in all honesty, but given how progress on Egi-Glamours has seemingly completely halted I won't hold my breath on a system where you can slap an item in your offhand slot that determines what pet you summon...

I would only be ok with viera if they didn't make them look like rabbit miqo'te.
I see dancer being a healer. Similar to ninja's mudras it would have dance steps, and it fights in melee with kicks and flips. But that's just me.
Only issue with Dancer as a healer that melees for damage would be certain mechanics that specifically target healers under the assumption that they have no need to go in close (something like Ifrit Extremes Searing Wind). I could see it going for physical ranged damage, though, with a weapon like a War Hoop that you throw. Of course SE could just adjust such mechanics to check and target ranged based Jobs first, with Dancer not counting as a ranged based Job, but thinking on it, War Hoop makes for a nice unique weapon IMO. Would be nice to have a healer that uses some TP though, I'm still bummed that Scholar wasn't a field-medic style Job coming off Musketeer back when people still expected Musketeer to get added pre-2.0.
