The few fish that are used as crafting materials are easily obtainable once your level and gathering is sufficient to catch them. The rare mats obtained only through fish desynthesis is one of the few ways for fishers to make gil. These mats are not any different than say crafting mats obtained only in raids, the Aquapolis, retainer ventures, etc. Also, the gathering rate for certain items can never get past 95% percent no matter how high your gathering is.

Obviously, fishers can never gather fish at the same rate that the others gatherers acquire their mats, but far fewer recipes require fish, and the ones that do only take 1-3 of them on average. But if I want to craft something like an adamantite ingot, I need to gather from a regular node, an unspoiled node, and a legendary node which are only available if you grinded the scrips to buy the folklore tomes. If I want/need HQ, I can guarantee 2-3 per trip with my abilities, but coming away with more than requires luck, or multiple trips.

In short, I don't feel gathering via FSH is unfair in comparison to gathering via BTN/MIN.

Fishing is not required to complete any content other than fishing. You don't need it to progress the MSQ, unlock a 24-man raid or 8-man trial, etc. You are correct, not everyone has the time to sink into it, but it is a pass-time. This is an activity that is not really meant to be completed in a matter of days or weeks. Another thing you might want to consider is it's not like the devs add fish every patch. The log is finite, and once you catch a big fish, there is next to no reason to go after it again.
