Study Allagan technology, find a way to become an Eikon powered with allagan ingenery, helping ascian to bring Zodiarche unified with Hydaelyn.
Then study again to see if I can reverse engineer what made me stuck in Eorzea, to bring part of Eorzea in this world.

then instead of fishing legendary fish I'd dive into the fishing spot and use shoulder tackle to get them and sell'em

Pray that the ending isn't a fatal one. Games that have ongoing plots are the worst to get permanently stuck in, simply because you just don't know. Zodiark could merge with our mother Crystal and wipe the world into anew for all we know. The warrior of light could also die for his or her cause. You might go to one of the heavens, but you'd still be dead, and obviously not with your non Eorzean loved ones. It'd be like going to a heaven that's not for you, and that's if the twelve aren't merely legends, instead of actual gods. You could also take a literal approach, and associate dying with your memory being deleted by SE at the end of the games life span. Either way, being stuck in an mmo is not good.

But why... like even if you wanna argue that you can only be combat efficient in one specific way, crafting and gathering make even less sense to restrict. My current character is carrying a tonne of job stones too (all of them, even) so why wouldn't i use them?

That said i'd be very confused then probably try teleporting. Also summon Fat Cat
