Be fair here - those races are incidentally also the most bestial ones there are, so they're the "only" choice for people who'd rather have something more animalistic/special.My theory? There's not just one all-encompassing answer, but I think a big reason, if not the big reason, is that at the end of the day, a lot of this playerbase has a preference for "hot girls with animal ears." I'm not trying to put anyone down or anything of the sort. It just is what it is. The vast majority of the active player characters are miqo'te and au ra. That's not a coincidence.
Looking at the GW2 race distribution, 15/14% are Charr, 15/18% Asura, 15/18% Sylvari, 20/14% Norn and 35/32% human. It's obvious human and pretty wins, but that's a significant portion of players that doesn't get their preference if that's all there is. WoW racial distribution paints a similar picture: While around 14% are human and blood elf each, the next thing, night elves, only get 10% and are closely followed by undead with about 8%, the Orcs, Tauren and Worgen with about 7% each and Trolls and Draenai with around 6% each. The rest scores under 4%. Again, the most human races are roughly twice as popular as the odd ones and again, the people who prefer the less human ones make up a significant portion of the playerbase regardless.
Even though still miles from the ideal, the closest thing to what those people want are Miqo'te and Au Ra in this game.

The thing is, there are much more beastly races then the Veira. Take the Ronso for example, or the Bangaa' or that other pig-like Ivalice race. In thier incarnation, Veira are thin, tall, amazonesque, rabbit women. Look, in my ideal world-lore reasons be damned- I'd have bangaa and viera at the same time. But Japan wants moe-moe kyun-kyun stuff so I'll probably never see bangaa in the game unless i gotta kill its expy (see amaljaa).
So you can imagine my satisfaction to hear that they'll never add miqote with bunny ears. Muhahahaha.

Actually, all that Viera concept art we've seen was the first concept art for the AuRa.
SE originally was going to have the AuRa be a rabbit demi-human race with the same lore and naming conventions they have now but they decided to go with something they felt "the game didn't have".

First of all, it's should have, not should of, but that's being petty.
Second point I'm here to make, the only reason, and I quote, OP wants Viera is because, and I quote: "2 years is a long time and I'm gonna get bored of our current races" Being bored is not a valid reason to take 6 months or more of dev time to make every singe piece of gear fit Viera, let alone design and implement them, in my opinion.
