Like any professional business, if you don't want to be scammed, research. Ask the group questions and find information from other customers. Truthful services wouldn't risk it.

Any decent FC with a good reputation will ask for money up front. They won't scam people but they're not going to take the risk of someone doing it to them.

They also are not going to take gil and fail. These people do this tons of times a day and have the fight down so much they can do it in their sleep. They are just going through the motions each time and know how many dead weight players they can carry if needed. Of course some players are actually competent and can help out and are just paying for a good team after banging their head against a brick wall trying to find people.
