Templar sounds like the most viable
is it spear plus Shield?

The MRD guild in Limsa has a wood sign hanging in it showing 2 crossed pistols. Maybe that's a hint?

a Defender a heavy def base tank
more about blocking, protecting party members
uses sword and large shield and heavy armor
really you do not need more than two tank classes.
*other mmo's* like to add other worthless tank classes that the only people who play were tanks already.
It does nothing to bolster the tank community but only to pollute the classes.

You just described a Paladin.
Variety is the spice of life, right? You only strictly NEED one tank class, one DPS class and one healer class. But there are people who play all of the available classes because they like different styles of characters. I play a Paladin now, but I'd love to see a more magic based tank introduced into the game.
While I don't have much experience with previous FF titles I think a Rune Fencer sounds intriguing. Maybe based on GLA since they already use swords and have basic tank tools as well as riot blade.

How bout letting me run in with dual shields. Imagine a Whirlwind AoE enemity attack! FTW!
New Job: Chemist that weilds elemental pistols.

Why can't have Magical Knight that is a Tank or Holy Knight like in FFT.
I think the next logical tanking class is obvious.
Add a WAR tanking class...
In all seriousness though, I'd like to see PLD to be redesigned with a touch of a holy, convert WAR to your more traditional sword-and-board tank, and add an evasion tank.
I understand this seems remarkably similar to other MMO tanking paradigms, but that's the thing–the word "Paladin" has come to mean something, inside FF lore and outside FF lore, and it seems silly to redefine such concepts arbitrarily.
Ronin(work in process name): Starting area/pick up class either a island or a shipwreck near the coast that became a small town. At lvl 30 the Ronin decides that this land is his new home and decides his lord and becomes a Samurai (This would conflict a little with how the main story)
Samurai (tank): High Risk Tank (could be terrible)
Third Eye: Very High dodge cool-down with very short up time. Time it right and you will dodge that very hard hit but because of a high reward the high risk is the short up-time
Not though to much on other abilities, of course a parry cool-down, and maybe a tank stance that reduces movement speed to gain damage reduction.
This is my ideal of what if they added a new tank class, that would make me change to it.
