If you are complaining that some side-quests are not very exciting, I'd have to concur. Though how would you know they are unexciting if you skip over all the text? Anyway, the XP from them is pitiful in the earlier expansions, so it's not like you have to do them or you're missing out.
If you want to learn a class through combat, Palace of the Dead and Heaven on High are both good ways to see and use all the abilities you'll have at end-game.
If you'd like more meaningful side-quests with better lore, then I agree that would be nice, but since they are so numerous I can't see how that could be done. Plus people enjoy different things, so if every side quest was lore heavy, I'm sure there would be complaints.
There are some great side-quests to be found with really engaging stories (from Stormblood onwards the quality really increased imo), but again, if you skip all the text, you won't know they are there.
If you are looking for more variety, then Sindele summed it up; that takes a lot of development time and would cost too much. Also, novel things like using a blowgun to put enemies to sleep would soon get stale if over-used.
I remember in WoW where the devs would come up with something novel that seemed really fun, until you had to do it over and over.
I have to say I think FF gets it right, there is a nice mix of quest types and nothing is overused.
