Of course you'd take the second option, because the second option is "I make loads of gil with little effort". That's what you all want (and hell, it would be awesome for me too!).
FFXI's economy was based on making materials scarce (gathering points were shared by all and were very limited in number, drop rate of materials was low, some materials only came from HNMs that popped once per day, etc), making crafters scarce (leveling up took a lot of effort and time, you were forced to choose a single craft to get to 100) and making HQ items was very difficult (had to craft on certain days that gave a bonus to HQ rate, had to have your monitor facing Mecca, had to cross the fingers on both hands and feet).
In FFXI most of your effort was front-loaded (leveling up your craft) and after that making money was mostly luck with HQ's.
FFXIV's economy is based on materials being plentiful and easy to obtain, everyone being able to level everything and players having effective ways of producing HQ items.
In FFXIV your effort is continuous (craft a lot and sell a lot).
For you guys, a functioning economy is "I'm one of the very few people capable of crafting this so I craft an item and sell it for a lot of gil". My definition of a functioning economy is "people buy and sell stuff and, if you put in the effort, you can make a lot of gil".
Being able to level all crafts and farm all my materials to craft stuff for myself is simply awesome. I won't trade this freedom for the heavy-handed restrictions that FFXI had just because you guys want to make some quick gil.
