Some people (maybe most) who are happy with their job(s) won't say so on the forums either because they don't bother with the forums or don't want the abuse that comes from admitting you are happy with almost any aspect of the game. So don't be surprised if you don't get much in the way of useful responses to your question.
SCH is only happy if you only started SCH in ShB or later, otherwise it’s still a modern healer that got gutted from the single best job the game has probably ever had
I’d give the “probably most satisfied with their job” to MNK mains
I think people are pretty happy with SGE, even if it could use a little bit of a damage bump.
"Job" is a broad term. What one person dislikes, another person likes. I love the current Summoner but I've seen many people complain about its simplicity compared to how it was in ShB.

Im happy with drk. Highest dps, great defense, easy to play ( just push all ogcd button and you are done
I enjoy WAR and the new SAM.
People who dislike the changes of their jobs will likely be more vocal then the ones who didn't I can name quite a few Jobs that got pretty good changes, goods that got some good some bad changes and Jobs that got some bad changes, Overall I dislike the "burst meta" which is what most people are currently complaining about when jobs such as Paladin will be reworked to fit better inside of raid buffs.
People will complain if things don't line up properly people will complain if they do theirs been so many iterations of different jobs now that different people want different thing, the thoughts and opinions that seem "negative" over job design while a valid concern isn't always bad choices
I think a good example is how White Mage has changed, White Mage was in a rough spot 6.0, but SE listened to a lot of feedback and actually addressed a lot of it's issues, While I'm not the biggest healer design fan I can see the Improvements, I think White mage got some pretty good changes
on the contrary (as people have already over used "Kaiten gone" ill use Ninja instead), Ninja I really don't like the changes and I don't think most people who's been a fan of how Ninjas played are really happy with the recent buff rework, It's understandable as Trick attack and 60 second damage buffs was ninjas niche now ninja is like every other melee dps with its buffs.
My current Opinion is that jobs should in 7.0 go away from this 60/120 burst meta, I don't exactly know if its a problem with raid buffs, I also don't think jobs should be selfish, but raid buffs are kind of the most bland "job support" that are slapped on every melee that isn't samurai to the point where I'm pretty dissatisfied with the blandness of melees, I really like how casters are balanced (they should all do more, BLM should be very close if not better then sam, rdm and smn should be boosted), I want more for ranged dps (They need to cut the range tax down for both caster/physranged), Machinist needs either more damage or more utility (Preferably both, I dont mean flat damage boost "utility" to even be considered). Healers have their advantages from each other, I think healers should have more of a small rotation (proc based) but in general healers are alright, Tank balance is... eh? I really like Paladin but can't say I'm hopeful that the changes will address anything, tanks need some more diversity between them.
SCH is never satisfied. Lots of clunkiness that needs fixing that hasn't been fixed for years.
DNC however, IS satisfied, as they're easy to understand, and are currently the middle of the pack in DPS this tier. DNC surprisingly has the highest amount of parses among DPS this tier.
DNC as it was born and raised on the Job redirection agenda. Others literally all have problems minus say RPR and SGE dude to being honeymoon jobs
RPR is actually a very weak melee at the moment, and needs some real tuning in it's place. It's performing lower than Blm and Drg.
Also like to point out most players will literally never question anything, SAM or DRG can and will eventually be reduced to such a hollow shell of what it used to be but the fans are so hell bent on being good little consumers that they will never raise their voice.
By that word, and in the words of Ba Sing Se to the benefit of literally nobody. “Their is no problems with Final fantasy 14” “Here we are not toxic”
To be fair most of that clunk is personal preference, besides seraph and dissipation still ghosting whispering dawn and fey illumination if you use them too close together other areas like seraph dissipation and aetherpact locking each other out is part of SCH’s unique gameplay flow that isn’t Jank that needs to be fixed
No other healer deals with these issues, and I have yet to meet any SCH who doesn't want those issues fixed. How would you feel if using Liturgy locked WHM out of lilies and Temperance locked them out of Benediction, Tetra, Assize, and Asylum? Or if using Divination locked AST out of cards with Earthly Star locking out Celestial Opposition and Celestial Intersection? If you think that sounds stupid, congratulations, you see the problem with it being like that on SCH.
Actually I don’t see that as a problem as it causes you to have to prioritise order of heals, just like aetherflow does, having 10000 oGCD’s and absolutely no consequence to pressing them is probably the equal most problematic thing about healers right now along with the absolute pitiful damage rotation
I've swapped from MCH to GNB/DRK.
DRK was my favorite since the bloodweapon changes, I just love the flexibility of the job.
Sure there are some problems such as the lack of sustain or darkside being so useless you could easily maintain it at 100% if the timer was invisible, Living Shadow being so forgettable you ask yourself "who is that idiot standing in the AoE?".
GNB, I wasn't at ease with the job, Bloodfest being a 90s but also generating resources was a block to me. I don't have problems with salted earth on a 90s CD for example.
Since it went on a 120s and the 5y on continuation, I find the job perfect. Sure, it's difficult to weave sometimes but even with my skill issues I can kitchen sink everything on tank busters in this savage tier.
Let's just say I'm eating very well during this expansion.
Thought it's temporary, I still want to come back to MCH at some point in the future. When I'll feel that picking MCH is not griefing my party, that is.
DNC was struggling a lot early in the expansion, and I think they're only happy now given how much worse RDM and MCH are doing by comparison. If RDM and MCH were properly balanced, I think a lot more DNCs would be complaining about not enough rDPS. But I agree with the overall rotation of DNC, aside from me not being a fan of 2 minute party burst window play styles after all, EW DNC rotation feels very good to play. Starfall Dance was just what it needed, as well as rounding Esprit.
I am happy with monk, Black mage and scholar.
The monk was my main at the end of shb and the most time in the story of EW.
Black mage is my first class, where i lost my connection around lvl 75 (by all caster, i had to many skills to watch and was overhelmed). After reorganation of the skill is he now again my Main (used him as final class again zenos, mage for the beginning, to, the mage was used for the end).
And after testing all dd, is the mage the one, i fell at best.
Scholar is my main healer. I like the barrier more than healing the dmg away. And i think, that scholar fit the setting more, as the sage with his laser.
Black Mage is always perfect.
You get some that complain about forced movement, but they're not trye BLM's, a trye BLM knows tgat BLM has the best mobility tools in the game. You don't walk anywhere, you fly.
I beg to differ. Did you see the dps forum after the 6.1 patch notes? A lot folks joined to talk about SAM from then up to 6.2 where a lot of us ended up so disappointed we kinda gave up. To say those job players never question anything is disingenuous to the people scared about the upcoming reworks with how design has been going downhill.
The casual crowd are the ones that don't question anything, they just look at it and go "well, if you think they're lazy why don't YOU go and make the changes yourself?" As if it's a crime to criticize out of passion or logic.
SAM is fine logistically speaking, but the enjoyment has been stripped and the enjoyable nonstop flow is broken.
DRG I can't comment on since I haven't gotten to it this xpac.
GNB has been nice though and I'm glad I swapped to that after 6.1 happened to SAM
A addition to the monk.
The only two things, where im not happy with him, is his elexir field. I loved it to Spam The kamehameha, while running around. Now is it locked behinde beast chakra.
And, he need a Animation rework.
Most of his weapons are a little lame (esspecial when most monks are fighting "bare hand"). The attacks are even lame to watch. It is missing the impacts of the trailer (shock waves). Or something other special.
The dragoon was similary at the beginning. But its moves evolves into nice looking attacks. And, the first aoe of the monk became nice to watch.

Any discussion about "happy and satisfied" will be open to interpretation. Answers to the question will vary extensively depending on the context: "in general", "with regard to Savage Raiding", "for Party Finder", "since 6.2 changes", "since 6.1 changes", "since 6.0" ...
I am happy with the new Endwalker jobs of Sage and Reaper. I haven't come across a job I dislike. I do have preferences: Of the jobs I've leveled to 90, I find myself playing Summoner and Bard more than the others.
It used to be WAR until they took away the cone shaped attack of Overpower.
Even for warrior an argument can be made that Endwalker made the job worse.
Warrior got even dumber than in ShB with all semblance of gauge management removed. Even people claiming that you still need to keep an eye on Infuriate talk nonsense. I gave it the benefit of the doubt before because I hadn't played warrior since ShB but now I can safely say that the change to 1 minute IR has made this basically automatic. You use 3 Infuriates in your opener and afterwards it is 1 Infuriate every odd minute and 2 Infuriates every even minute burst...if I can pick up warrior again after a year of not playing it outside of 1 or 2 dungeons and get a 97 on my second ever P6S clear it tells you a lot about both it's skill floor and ceiling. The changes to Overpower were just the latest issue.
Only job I am truly happy with atm is GNB, though I can see where others might take issues with the current iteration.
SGE is decent, but it irks me how it feels like they just called it done without making toxicon usefull.
WAR is close too, but I miss my cone on overpower.
SCH's been on a downward path since ShB. Same for AST, though I can stomach the simplified cards more easily than the missing DoTs.

Overall happy with WAR. Damage could be better but from a gameplay perspective it is great.
Healers----no due to 1 button spam
DPS--- no due to great imbalance between them
I love DRK and its still my main but even with the small QOL they have given us in EW most DRK players are still not satisfied with the job.
I absolutely love RDM I enjoy its rotation, it's satisfying when I play well, I just wish the devs would acknowledge that the balance is rough right now, and at least reassure us that they plan on doing something about it.... could probably use some more oGCD's in my opinion, but I don't see that happening.
Haven't levelled MNK to 90 yet, but damn I actually do enjoy the new rework. I do miss the positionals, but they've been toning them down a lot with all the melee jobs and I expect them to be completely removed soon anyway. We even have an entire fight without them (P2S).
DRG feels great with it's changes too. I enjoy having 2 charges on Life Surge.
At the risk of sounding controversial, I enjoy lvl 90 GNB. Though, putting Bloodfest on a 120s CD killed a bit of the gauge management that came with the third cartridge.
DRK still needs gameplay and identity improvements. It shouldn't all be held together by TBN.
I would say right now my biggest issue with balance is something no one talks about, and its how jobs preform pre-lv 90.
ARR/HW/SB content feels so BAD to be synced down to on so many jobs, you can tell they're not designing jobs to be fun to play before current expansion level and its making dailies really drag for me.
It wasn't always like this either, a lot of jobs that used to feel just fine unsync'd had all of their complexities removed and shoved back in at lv 70/80/90 and it results in the begining half of the game feeling terrible.
Its not something they even consider when making new jobs, or balancing existing ones, everything is balanced solely around week 1 of high end raiding, which cool thats important but damn SE, leveling some of your jobs is an absolute slog.
If I was a new player starting out and wasn't already invested in it, theres no way I could make it past HW for gameplay.
I think the problem with that is it runs into the current MNK problem, if you have a mostly complete kit at 60 then just get a few filler buttons and potency upgrades then the job feels boring to level for any level above the “roughly complete rotation” level, I think something like SAM does it mostly best, the rotation isn’t even close to complete at 50 but you can still do enough to generate a midare which is kinda the core of SAM’s damage rotation outside its bloated level 90 burst
