You're going to get varying responses, because "engaging system" can be argued easily.
In my humble opinion, most jobs aren't, not in ShB, aside from maybe those that have multiple party utility actions in parallel with their rotations, like Paladin, which is probably one of the very few who still have more than one action you may or may not use to support players in less predictable manner. Everything else is just scripted dance that is always expected to fall into place. Even among healers there isn't a whole lot more than "do your rotations well and avoid stuff" going on.
Bard and dancer are more proc and priority than rotation, but they're both still pretty simple.
Dragoon is far more positional, rotation is not easy/varies and you SERIOUSLY need to be focused to keep from floor tanking. Black mage in Savage played correctly is a beautiful thing to see because knowing you windows for cast in this world of ground aoe is hard I think.
I see i just want something that will require alot of focus and energy to do, because i lose focus easily when its well simple... and end up d ieing not cuz idk what to do but because im to zoned out to care much lol
I think as far as uptime goes...for me it is BRD and GNB. To me, they are pretty engaging and fun. Complicated? Nope. But complicated does not always equal fun. DNC is a pretty busy job too. There are more but I'm sure they have been and will be discussed.
DRG now is a bit more spammy for a lack of a better word. Somewhat fun and in my opinion an improved version of Stormblood's DRG, but HW's was tricky yet rewarding for good play. Really, REALLY had to get those positionals and not waste time because there was so little room for error.
To me Dancer is extremely engaging specifically because it doesn't have much to keep track of which lets me do content I might normally be too intimidated to do. That dash is also just...amazing to have.
Since you're a PLD main maybe try to optimize your job?

I know you say you're bored, but if you can't stay alive in braindead content because you lose focus, then why should I offer you a job that requires more of it? That's like you crashing a car in a race course, and then I just give you an even faster car in a more difficult course simply because you say the course you crashed is too easy. I can just see all the lols when a player tries to excuse their floor tanking with "Sorry y'all, this shizz is just too easy."
Anywho, I will give a choice of cars anyway. Basically play any job with a high APM such as AST, SMN, or GNB. Another would be jobs that have you keep track of multiple resources. SAM as an example is considered a really straight forward job, but the skill ceiling with it is quite high. As the easier a job is to play, the easier it is to also screw it up. You have a DoT upkeep, a speed buff, a damage buff, three combo finishers, a job gauge you can easily screw up, burst phases every minute, and a self mitigation tool you should be using every time it's off of CD and you're about to take a hit.

I get it, but again this is not making a strong case for you. How can we assume you care about playing a job correctly when you also don't put any effort into using proper grammar? Does that bore you too, so why even bother? If I took my SAM into the NM raids and don't get touched by anything avoidable while also pumping out max deeps, that would tell me and others that I probably should head into EX or Savage continue to put my skills to the test. If am dropping left and right whether it is because I lose focus, or I am just not that good, then that says I need to stay right where I am at.

What does "keep the mind engaged" even mean? Keeping track of things? Pretty much every job has a gauge you need to keep track of, that's nothing new.
Every job boils down to muscle memory as you need to know where your buttons are and when to press them. The only thing that breaks up your combo's is the enemy doing something that forces you to move- which doesn't change the fact there's still a preferred path to follow in the order you use your skills in.
If you really want to adapt on the fly, go play... any healer, really. People take enough damage to where any solid plan you might have in your head goes entirely out the window. But that's not to do with any of the three healer jobs' kits, but more on people eating damage they shouldn't be.
For DPS, Black Mage is the one who needs the most positional awareness as you can pump out a lot of damage given you can keep yourself safe. It has no skills you can cast on the run, save for a really awful one that does barely any damage. This means you need to find spots to stand still in, plant your leylines and prepare to hold fort as you try to get balls deep in your rotation.
Or do you want to watch for boss tells and react to that? Go tank. Any tank. Everyone gets hit by AoEs, but they're the ones eating single-targets.
Seriously though, just go try something and stick to it. There's no real point in asking the community to give you something when you're not listening to anything people are saying in the first place, but also, nobody can tell you how a job feels. That shit is a 100% subjective and by your criteria there's nothing to pick.
Honestly, regardless of the job you pick, you are going to reach a point (well, hopefully at least) where you know exactly what you're doing and your mind will sort of go on auto pilot while muscle memory takes care of the rest.

You aren't going to find a job in this game that takes up 110% of your focus once you play it long enough. But if you are going for "busy" anything, Extreme, Savage and Ultimate are a thing.
Its called being dsyelix lol and i try rlly hard to even be close, try to realize there are conditions that effect that kind of stuff before using it as a reason to be dismissive.
Also i guess focus is wrong with you. So here is the truth i dont care enough to play with looking at screen or with both hands on just about everything cuz its so simple it makes me want to fall asleep. Basicly have to hinfer myself to make it some what enjoyable

Monsters and fights are overall great.
Custmization is amazing.
Rp side of it is god like.
Golden saucer is godly..
Music also godly
Side storys are godly as well
Almost everything is god like but the jobs themself are 2 simple
But jobs are designed like they think players are brain dead or something. It doesnt matter what higher content offers if the jobs themself can be played by a monkey perfectly.
Yeah... I recently watched a handicapped individual born without arms play the game with his feet. If you're so bored, and things are so easy then maybe try that.
Many of us play with some kind of constriction. However, it doesn't cause those players to stop caring. That usually has to do with depression more so than a physical limitation. Even in braindead content, what tends to suffer are things like upkeep because it's not as important to optimize. Players, for the most part still obey mechanics that will kill them.
I really enjoy MCH a lot. Much more to it than 123. Wouldn’t say it’s hard but you often have things up and choices to make.
Really surprised I haven't seen more mention of NIN.
Nin has a lot to keep track of and is SIGNIFICANTLY more than 1 2 3. Very busy class, always prepping for the next step.
The real draw of FF is the story, well now it is. There use to be one other thing: ability choice and customization. Games with Jobs usually had way to combine jobs and/or to pick and chose abilities. The materia system in 7 and the Junction system in 8 allowed you to greatly customize what each character did. This game had some of that, but it's pretty much gone, with Blue Mage being the best example currently in the game. Now you are just given a set of actions designed around building up to a few awesome moves. Gameplay is pretty much try to build up to a big finisher while the movement mechanics are there stop you.
Razor thin balance wasn't an issue in any RPG, mmo or otherwise, until Blizzard took on the esports mentality and started designing encounters around throughput and turned pvp into sport. And everyone followed suit.
Black Mage. There's no way to dodge AoE, spam Fire IV, watch for mechanics, and keep up Enochian in your sleep. You have to keep your eyes on everything. In ky opinion, it's the most unforgiving rotation in the game.

And a Heat Blast spam segment, it’s not hard but that’s not what makes a job fun and this facade of “choices” means very little and I’m confused as to who convinces themselves that MCH is in any way complex. It’s a dog’s breakfast of a job so afraid to do anything daring with its concepts. Job can be summarized with “you press a button”
I'm not sure which class would be most engaging, but I find that all of them require a decent amount of focus if you want to play perfectly. I constantly take mental notes of little things like "should have refreshed my DoT instead of casting another direct damage spell there", "I was too greedy with that cast and took a vuln stack", "I reacted to that partywide too slowly and was too late to shield it", "that was a bad timing to use my damage buff", "wasted a proc because it was already active". I make it my personal challenge to get through runs without failing any mechanics and getting my rotation as close to perfection as possible.
I don't think it's the jobs that are your issue with focus...
So, giving it a bit of thought here.
For tanks, gunbreaker has the highest APM, and the most active burst phase (as in, it's the only tank that doesn't just spam one button until a buff runs out). It also has the only invuln to kick you down to critical health before activating, so you have to be more careful about using it, because bad timing or server ticks can kill you instead of saving you.
For healers, I'd lean towards astrologian, for the extra work of managing your card buffs, but 90% of healing is reacting to other players' actions, so it's gonna vary wildly depending on the rest of the party.
For melee, ninja has to keep up its own buffs, line up Trick Attack with other players' bursts, and remember all of the mudra combos and when to use each.
For casters, summoner has multiple rotations that go in sequence, requiring you to know which set of buttons you need right now in order to get the most damage done. Maximizing Bahamut means you also have to know the fight, so you know when and where you can safely stand still to cast. Plus the extra fun of watching out for other people in case you need to swift-raise someone.
For aiming.....well, none of them are complicated, but I'd say bard, since you have to keep track of your songs, your dots, and your support abilities.
