I like how PLD has a main and off-hand options with "endgame weapons" and would love to see this adapted to some other classes.
Just a few ideas:
Archer/Bard - add quivers to the "off hand" slot (even if the model doesnt actually hold it in their hand, it's just on their back/hip.)
Rogue/Ninja - decouple the main/off hand weapons so off hand can hold a kama, or a curved blade.
Scholar/Summoner/Archanist - main hand book, off hand... Quill? Crystal ball? Reading light?

They still only have one weapon, the offhand is an extra defensive item. Making the Ninja Dual-wield would make it very odd unless they specifically only had a Mainhand Weapon, and the other dagger was just for looks and stats. I think it's fine as it is now.

You'd now need 2 weapons to have the same DPS you had before, which would cause people to not only whine but hate RNG more, as Dragoon would stay relevant with just the one weapon. Though I do think it would be neat for the eventual Samurai class to have an offhand Wakizashi sword. This would differentiate them from 2handed tanks Dark Knight & Warrior, but be different enough from PLD's shield blockrate meta to be a unique tanking style.
Hell they could have dps and tank type wakizashis, and if Samurai were to have a base class it could branch into two different jobs like Arcanist does SMN and SCH, with respective OH options. -

Just putting an item there with free stats serves no purpose other then "You have to get this slot filled as well". -

As it sits right now, only the MAD/WAR and LNC/DRG actually put both hands on his two-handed weapon. The ROG/NIN & PUG/MNK sort of do but it's actually two separate weapons. Visually, the ACH/BRD, CNJ/WHM*, THM/BLM* & ARC/SCH/SMN all hold thier two-handed weapons with one hand. I'm not saying that's a bad thing, but you could differentiate the classes more by giving some of them main and off-hand options.
*I do realize there is some 1-handed equipment for these classes. However, none of that equipment is commonly considered "end game" capable. I wish it were - cuz I would use it. -

Well, I have seen i95 Leviathan CNJ/WHM one-hand wand. Similar can be said about THM/BLM.
So maybe as of 3.0 we might see a higher level arms/sheilds for both CNJ/WHM & THM/BLM.
offtopic: I seem to see the non-real players BLMs like to combine (sanguine scepter Lv.55) & (square ash shield Lv.17) for a reason.
