Look, there are nuances. No one's asking for a dinner date (though we had that with Aymeric, to be fair) or kissing scenes or whatever (where did you get that idea from anyway? I'm confused), but the chance to flesh out our character and their relationship with an NPC of our choice a little bit. Giving our hero the option to flirt with someone does not detract them from doing their duty. Case in point: Your "Yes, mother..." comment towards Y'shtola, to which she replies she'll put you over her knee if you keep up the cheek. That, at least in my opinion, could easily be interpreted as flirting, as the necessary conditions for it are clearly met. And yet, this does not detract your character from saving the world somehow, now does it?
I get it when people want their character to be be all focused on their duty, no personal distractions through romance and that kind of stuff, and I respect that. However, there are people who would like a more personal note to their character and the relationship they have with certain NPCs. There is a humanizing effect to that, and no matter how big a hero the WoL/D is, they are still a person with their own feelings, wishes and weaknesses. I think Shadowbringers did a good job at portaying that, with the WoL/D not being immune to the light's corruption and feeling their effects and all, for example, but there is room for more.
I don't think adding a little more flavor to the dialog options to cater to that is going to kill anyone, flirting or no.
