I feel like I didn't have fun with FF14 since a long time now. EW post-expansion content, and more recently Dawntrail, felt very bland to me.
Really? We're at the point of "they should pause housing demolition because the particular current content feels bland to me"? *Shakes head in disbelief*

Until they set back higher standards for the content that is released, I would love them to pause the housing demolition.
Again, this is confusing personal opinions with objective facts. Personally, I am still very satisfied with the content being released and feel it's maintaining a high standard.

But until we reach that point, I really feel like I could need a break, to expel that disappointing content from my mind and also to show my dissatisfaction. I know I'm far from being alone in that position.
There were ~1.1 million active players before the release of "early access," meaning the current population is probably significantly higher than that. You could take any position in existence on this game and you will be "far from alone" on it just by virtue of basic statistics. For example, I'm really enjoying DT so far, and I can just as confidently say I know I'm far from alone in that regard, too.

Seems weird to me they don't pause housing demolition around when new expansions release.
New expansion releases are when there's a population spike. That would mean it makes the least sense to pause housing demolitions then. You have the most people potentially looking for plots and the least number of plot-owners likely not being actively subbed. Why would you pause it then?

That they make it a limited resource when every other game out there has mastered the art of instanced housing for a decade
WoW called. They want to know when this system was slipped into their game without their knowledge. (aka the biggest MMO ever made has not even done instanced housing)

house demolition should only start once every plot is taken anyway. on my servers theres tons and tons of empty plots available. yet we still have demolition.
This...I could get behind. When the argument for housing demolition is predicated on making sure there is a supply available for active players, it doesn't make sense for it to still be active when there is already plenty of land available for active players.
