Yeah, we should definitely be able to do ear wiggles with headpieces such as caps. Not being able to reduces many glamor and portrait options for miqo'te just because of having special racial features that the art team has not been taking into account for a while now.
If the problem is not solved for miqo'te, it will definitely happen to viera and hrothgar as well when they become able to use any head gear, since they will have to design different ear holes for each of the three races.
I would also like if some suitable head pieces like hoods would show part of our ears drooping down from the sides of the head when worn. I believe it would expand the cosmetic choices to go beyond just the basic look of the headpiece itself.
Seeing how the Miqo'te they showcased the new class Viper with doesn't have earholes on the hood and just removes them I wouldn't hold my breath.
Sure, it's still under development so changes could happen.
But it doesn't look like they made any effort at this stage at least.

Watching this video was precisely what made me start this thread. The lack of effort when it comes to ears (and lately tails) cannot be excused anymore.
This hood for instance could either show the ears sticking out, or drooping down within the hood and seen depending on the camera angle.
I just want them to make an effort now with the graphical update, revise all headgear affected and adjust them for the ears in all cases where it's suitable.
Be careful what you ask for. You'll end up with some monstrosity like this instead:

If I had to choose between having my ears shown, or having them ruin a hard shelled helmet like that... I'd rather have them hidden. If it's like a cloth cap, leather hat, or some sort of hood then sure cut out some holes for them.
I can see why you don't like it but the question would be... do you think it'd be better for the ears to just poke out instead of being inside special compartments like those?
When the helmet is small and tightly adjusted to the head, it's basically impossible to just have the ears fully tucked in (at least if we use a "realist approach"), so I suppose that's why they chose this option. They also did something similar with miqo'te ears for this helmet
One solution I could see is giving an "ear toggle" option to hide/show the ear socks so that it would be more satisfying for everyone.
But the general idea of my suggestion is for them to adjust head pieces individually: to go through each one of them and determine whether they should be changed at all and, if so, to think about adding holes so that the ears stick out, ear socks or something else that could fit the specific piece.

This has long been a huge frustration for me too. I don't consider myself a big complainer; I'm really not bothered at all by other common complaints like clipping or role restricted gear. But ears are basically the #1 defining feature for Miqo'te, and when I look like I don't have them, I don't feel fully like a Miqo'te anymore. It's a big hit on my immersion and that's really high priority to me. Tails are a thing too, but I personally mind that less because at least your butt isn't the main focus of attention in important story cutscenes like your head is.
I do understand it's a workload thing, so if we need to prioritize certain gear, I'd prioritize:
1. Artifact gear — e.g. the RDM and bard hats are a big thing for me personally.
2. MSQ gear — e.g. the Crystarium helm.
3. Really tight-fitting headgear where it's just not plausible that your ears are hidden underneath — e.g. OP's example of the Calfskin Rider's Cap, or the Appointed Cap.
I'm super grateful that at least my very favorite hat model, the Dravanian Tricorne one, has really nice-looking ear socks. I'd be beyond ecstatic for the return of either those as a solution or modeled ear holes (Fieldkeep's Canotier is my favorite in that category!), but I'd also be plenty happy with just a toggle to allow clipping.
