Scholar is a hard to play class, you have to control your pet.
If you can't do that I don't recommend playing a scholar, WHM or AST is better of a class for you.

This is very true. As a main WAR, I have to enter a Zen-like state not to backseat tank for a lot of these DF matchups.
This is another good point; it's hard to support pets because they exist in that same NPC maybe-space. They get AOEs at least but it could be so much better.

I call BS. SCH is by no means a hard job to play. Not even remotely.
Let me be blunt, Whispering Dawn won't do shit for Estinein. Why? Because of his massive HP and Whispering Dawn does not outheal that damage if you think using that helps. You're better following the advice of others. Stoneskin works WONDERS. Adlo helps and just straight pumping heals and keep whispering dawn for your party members to avoid taking attention from either Estinein or your tank. You make it sound hard but I point to the fact that you trying to use the PS4 virtual mouse like it's a neccessity is terrible because it IS a horrible, unwieldly function. With the scores of players that have cleared that fight (First try here during the early access) there's multiple work around it.
Said on mutiple occasions in, as a healer, we are NOT responsible for healing another persons pet when ACN class have Sustain. SMN should be on top of their own pet management with an ability that takes one second to cast.
However, if you want to, character config, filters, enable pet/minions when weapon is unsheathe so then you can use right/left to target pets.
I know it's a bit late to chime in, and this may have been stated before, but as for targeting him with the touchpad, there are MUCH better ways you can do that. I'm a PS4 player myself. All you have to do is set it up so that NPCs are targetable with the D-pad while your weapon is drawn. If you don't want this to be constant, (due to the annoyances in FATEs at times), you can set up to four options, (not counting your default "weapon-drawn" and "weapon-sheathed" options), that use a combination of L1 + X/Square/Triangle/O to switch your targeting preferences on the fly. For me personally, I have it set up so that my L1+X is healing, where my d-pad targeting ignores enemies but will target NPCs, pets, non-party PCs, and chocobos, my L1+Square is the basic "enemies" targeting, my L1+Triangle is the "all" targeting, and my L1+O is NPCs and objects only, for when I'm in crowded areas.....
Also, I would recommend NEVER having Party members on the targeting option for d-pad, as unless I'm mistaken it only affects the left and right d-pad targeting, whereas the up and down d-pad targeting will always switch between party members in order of how they appear in your party list.....

The regen that's so potent it's locked behind three cooldowns is trash and not worth my time, something you can't possibly know because it's not applicable to any NPC in the game... but adlo is totally gonna cut it.

Whispering Dawn at 60 ilvl 189 with fey illumination and rouse for around 800-900 per tick. Embrace doesn't even break 2k unless it ticks. I wouldn't consider that useful for an NPC that absolutely requires healing at my level so there is no way at level syncing with suboptimal gear for Aery would make it viable towards his survival.
Adlo, on the other hand is actively blocking several hits, and crits with larger heals, allowing you to leeway to heal bomb him while eos to tend to party members taking unnecessary damage during add phase.
I play on PS4 as well. I once had the same exp when doing fate. There's this tank (who's not in my pty) tanking the mobs. I noticed his health was nearly empty, so I tried scrolling through targets but I couldn't somehow target him, and I watched him meet his demise with tears (he tried to run btw, rip). That's when I decided to search the net and finally found that L1+square/triangle/circle thingie. :)
