I'm for Beastmaster as a DoL class ^^
catch wild animals, tame them (that part can work like a mini-game), get stuff from them that will not kill them (so battle classes can still get loot from killing).
Timed "Hidden Nodes" animals can work like rank A Hunts.
Or building up a farm, but that have to be instanced and not like housing.
I’d welcome a shepherd class that let us quickly farm skins/meat/horns/fangs without needing to go out and fight anything or send retainers out.
That's a Miner's job (getting the items) & an Alchemist's job (breaking them down) to be honest. I want what you've described but on the jobs we already have. Unless we get the kind of Geologist that the Settlers series has where they go out & find new/rare resources in new areas. I thought that's what Miner would be when I started FFXIV, sadly it's not that exciting.

The choices of DOL or DOH are limited due to the current scope of the game.
But, if a new way of playing the game arises, new needs of crafting disciplines open up as well.
Let there be a Magitek Armor Battle Racing Circuit.
Then there is a need for pilots and a new craft, magitek armor frames, and those frames need special high tech parts, which a new DOL could be needed to farm things like special materia, mist power, special alloys, etc, etc.

I'd rather have them finally implement a tackle box for all the fishing lures then worry about a new DoL class.
I want to know why every tiger I kill doesn't leave a skin behind?! He sure had a skin while I was fighting him. And how come his tiger friend a few feet away has THREE skins? Is he thinking of starting up in taxidermy maybe?
I thought about this and a DoL Rancher would work. Basically you have to raise an animal or animals, until fully grown then "send" them away to a "processing center". After which, you reach the material you desire.
And apparently most buffaloes I kill don't have meat on them... I wonder what makes up the bulk of their mass then? Sure would be nice to know which of them are magical meatless buffaloes.

I don't want to see another gathering class. I think we have enough already, and I'm one of those weird people that actually enjoys gathering!
What I would like to see is Archaeology introduced (similar to WoW) where you can go out, dig up artefacts and learn something about Eorzean history. Items could be displayed in a museum somewhere, which you gradually stock.
So. Much. This. I've always thought there should be a system where every class has the ability to contribute to a "private collection". If you have done the LTW quests you'll see how it could work. It could even be displayed in your home &, for those without a home, in a special instanced room in a city (probably Ishgard as they're freer thinking about education).
I was thinking of a Beastmaster type of DoL class as well, using this new class as a way to recruit and train additional companions to fight with you, similar to the company chocobo!
Similar to glamour and housing, this would be another way for players to customize their character. Use dyes to change the colour of your monsters, and new recipes will be available to craft accessories to make them look unique.
Additionally, as other have suggested, maybe work in a system where every XX hours, one of your companions provides you with some mats (hides, meats, milk, etc.).
Fill out the Eorzean monster log by catching every monster on your list! Keep your favourites and grow their strength in battle and teach them new skills!
I haven't exactly worked out whether you would need to sneak up on a monster from behind, engage in a normal battle another companion, or maybe even have a bit of a 'pokemon' encounter when you are in the Beastmaster class.
Consider what happens with combat classes; you have existing classes that beat a mob until its a red smear on the ground and new classes also poke mobs full of holes, they just do it in a slightly different manner with slightly different skills. Maybe thats what we should be looking into? Instead of trying to overhaul the material and crafting system to add a new type of gatherer, why not have a gatherer that does the same thing with different mechanics?
You could have a Geomancer that uses spells to extract diffuse mineral deposits in an area into clumps of ore or squeeze rocks down to small gemstones. A druid could commune with seeds in the ground to sprout herbs for them to collect or ask trees to voluntarily drop branches and logs. A taxidermist could collect bones and skins using chemicals and solvents.
Or maybe a class that gathers ore/lumber with the same RNG mechanics as a fisher and a fisher with the same choice mechanics as Min/Bot.
There are two things I don't understand :
1) "Please no more items to farm" : Those items already exist in the game, you won't have to farm something else, just a new way to do it.
2) "We have enough gatherers" : Why ? Why would you be upset if we have a 4th gatherer ? If you don't want to level it, just don't.
