Modders have also made stuff for helmets to work. It just hides the face model. It's not like Hrothgar aren't used to having their faces be replaced with humanoids in general by now, so it won't make that big a problem. As for Viera, I haven't personally tried them out, but I doubt they would look any worse for wear. Stuff would look ridiculous on some stuff I'd wager, which a little bit of tweaking would fix, but they would be no more ridiculous than half the modern stuff on Au Ra or Miqo'te as it is.
Three things
a) Square Enix has done three CGI movies and a bunch of photorealistic games since 2010. This level of graphic quality is peanuts for them. It's even what led to the infamous flower pot with more frames than a playable character back in 1.0, so if they can do a good job with low-poly stuff, this should be easy for them. Even the FF12 team would laugh.
b) For those who think "Oh, well they're using a low-end engine", first of all, it's the same engine as FF15 but scaled slightly down to work for an MMORPG. And secondly, as awkward as that engine might be, doing stuff like this is wholly within the engine's capabilities. Otherwise Modders wouldn't be able to do it themselves. Some stuff is as simple as a Metadata Switch, no adjustments required.
c) For those who still think "Oh but that'll push the polygon count"... a) You sure about that? You sure it will be that drastic a change? and b) That can be fixed.
People can't complain about bloody grapes in the new area and be so butthurt about player characters walking around with hats. I get we'd be more numerous than grapes... but the double standard persists. Grapes had more support than headgear for these races.
