I think every summoner would easily cap summoning magic in Walk of Echoes.
Right now I find myself only reall on SMN as of late to do WoE (once in a blue moon), using Alexander on old endgame and new bosses when asked, and voidwatch. I can't really remember why I would be on SMN anymore outside of those events. =\ It's saddening... for three years it was my only 95 job but now I've taken liking to DNC and I get put on WHM duty inside abyssea.

Only if you define ridiculous as in "barely noticeable". Honestly, I tried to be fair and bought it and tried it for casting, no go. Tried it for guard/parry, again no go.
I see more difference with martial master than skill up ring + earring +food (all at the same time)
I am sure it does something, but nothing worth my time to parse the minor difference.
I just got 110 shield and 20 parry skill in an hour =/ barely noticeable says what?
What food was this? And up from which skill level?
Someone mentioned to me that the NQ skill up food say for example Saltenas only worked up to a certain skill lvl and beyond that skill lvl you would need the HQ Elshenas. So for example say that certain skill lvl is X, then from 0-X in skill lvls you'll get a nice performance out of Saltenas however once passed skill lvl X you need to buy the Elshenas to get that kind of performance.

Huge possibility that what was said to me was a giant lie like all things based on hearsay. Never had a problem skilling up weaps for my war with a few mandies and retaliation so i never even tried to eyeball the difference between NQ and HQ foods.
My last attempt to quantify the effects of skillup food was inconclusive. Neither Saltena nor Elshena had any detectable effect on my Parrying skillup rate (skillups/parry) or the size of skillups (skill/skillup).
It's possible I was over the skill cap for Elshena already (started at 335 parrying).
