I find Hrosshvalur 10 times harder to proc than iron giants. Seriously, the "before" or "after" melee trick thatwork for IR, doesn't work for the pugil NM. THat guy is retarded. literally had to try 10 time RLB once.
I do agree they, and everything similar are silly (Karkadann for example might be the same?) and certainly would like them to be changed to 'normal'.
It's really the only thing I have against them, and I certainly don't feel it makes them more challenging and/or fun, just annoying. ^^;

Because an iron giant's "melee" attacks are actually 3 different AOEs (lateral swing, vertical swing and stomp) that do damage, have one of three different effects (stun, amnesia or knockback), and hit multiple targets at once. They are not melee attacks at all, they are special abilities.
Shinryu's "melee" attacks are exactly the same (AOE + stun + damage) and also count as an ability rather than a melee attack for the same reason.

Iron giants are not hard to proc at all, you just have to know when to WS or how to deal with the mob in order to proc a spell.
I think they are quite cool mobs and they are laughably easy to kill in Aby, but then so is everything.
Ironclads aren't all that hard to proc. Greyellow can be a pain sometimes, but the best trick I've found for that is to kite them. If you can keep people out of their kite path and keep a fair distance ahead, they won't swing, meaning they're not blocking procs. Red and blue can easily be timed on them while straight-tanking, so if you can't get that, it's more your problem than with the ICs. D:
I like the concept behind them, though I'm personally a little disappointed that they didn't get Mighty Guard like previous games. Partially because that was where you got it for BLUs, mostly. >_>; CURSE YOU SHINRYU!

Mighty Guard was from Behemoths in FF8 and from some squid thing in FF7.
Hrosshvalur is really a dick to proc. That's all there is to say!
Karkadaan is the same with melee = tp. It can be annoying when it binds and gravity with melee then proceeds to Lightning Spear and amnesia you, making it take even longer to proc blue.
Iron Giants haven't annoyed me more than these two XD At least they can be kited for yellow proc and are much easier to time your weaponskills on.
Does this make any of them harder to fight though? Nah, just annoying and more time consuming.
Pity you can't just mindlessly fire off spells/ws's on every mob, and get 100% drops everytime.......
