Sorry for bumping this, but as a DD job on Ifrit, I notice that my animations for my WS often hit a particular point on his body. Is this indicative of being able to incapacitate that part, or...?

Not at all. I mean, as stated above, you should get a message indicating you're actually hitting that part (i.e. Your [Weapon skill] hits the [mob]'s [body part] for X damage.).
