sounds good to me, i would also like more multiplayer games that multiple players can play together like mahjong but way less annoying to play and easy to get into.
Trouble is, Doman Mahjong was only added because it was made by a single FFXIV development team member in his spare time for free apparently (which Yoshi liked so much, he arranged for it to be added as a part of the game), so it's unlikely unless SE are willing to spare the development resources on it.
It's a great idea though, and chess is a real world game that has lore connections in Ishgard as you said, but, yeah, due to the aforementioned reason, I don't think it's likely to occur sadly.
I learned to play Mahjong in a Taiwan sort of variant, touching FFXIV Mahjong I was like "Oh my god I have to learn another language for this game, again!". richi rikki ratta tatti man lol. At least Pon and Chi sound the same :p. It's a longer game but I'm surprised there is no MGP / challenge log opportunities, or even perhaps a semi-yearly competition, just cause it'd be fun for those who enjoy it.
Chess would be neat. Or maybe a sort of Tash-Kalar :D.
For these type of image based games I wonder how hard it would be for them to wrapper it up some way to allow them to be played on the phone (via companion app). 1 Kupo nut = 5 saucer tickets and you can play some mini-games on your phone and earn MGP too lol.
Is there any word on when they're going to add Eorzean Global Thermonuclear War to the Gold Saucer? I hear it's an interesting game, although apparently the only winning move is not to play.

This would be cool, especially if it allowed for not only orthodox chess but also for rule and piece variants like Chaturanga or the insane complexity of Tamerlain's Chess.
I've also thought an actual raid or trial battle against a 'goblin chessmaster' where the battlefield is a giant chessboard and we have to move appropriately for the kind of chessman we're marked as to avoid damage would be cool.
I wish the casino just had normal slot machines sometimes. Is that to much to ask.
This would be genuinely super interesting and fun, and honestly, shouldn't be too hard to implement, right?
I mean, Mahjong sounds like it has more variants than Chess anyway.
I really doubt this will be implemented or even acknowledged by the devs, but it'd be great if it happened (it won't)!
I would love this, because I love playing Chess.
However, if it involved gaining rank, MGP, or anything of the sort, then people would just cheat with a Chess engine.
