You can see if you get 4 items per try, and 100% per try, but there is no way to see if you get 6 tries, which is seriously annoying, because it makes the 2 extra attempts nearly useless. Can you please fix this? And I can't be the first one that has pointed it out?

The number of swings is specific to the type of node and any variation will show as +x attempts in the bonus section of the gathering interface, so you will always know it ahead of time. E.g. normal ARR nodes have a base of 4 attempts, most timed nodes have a base 6 attempts, etc. If you can't remember it then you can also see it on the node's health bar in real time. It's not a numerical indicator, but it's pretty clear to tell whether it is 25%, 20% or 16% of the bar is being used up with each swing.

All normal nodes are 4 hit by default.
Any "buff" aka added bonus feature of the node will show it its target or window (unless you have auto-loot enabled, then you get a different loot window which does not display any bonus), such as +2 additional hits.
All legendary, unspoiled, or ephemeral aka Timed Nodes, have 6 hits by default, with any "buff" from a bonus feature shown in its window or target.
If you happen to not qualify for the bonus feature, due to lack of Gathering or Perception skill or by GP points, then you don't get the feature bonus.
For example, if the node has a +2 hits if you have 1000 Gathering skill, and you have 990, then you do not get the extra +2 hits and on a normal node this mean only 4 hits. If it was a timed nodes (legendary, unspoiled, or ephemeral), this means you only get the default 6 hits and not 8.
So, all nodes show a bonus feature if it has one and if you qualify, you get those bonuses.
Otherwise normal nodes are 4 hits and timed node are 6 hits. -

Have you actually seen this for yourselves, or are you just imagining it has to be that way, because the 4+1 shows? I have never been able to see the 4+2, anywhere, and I've looked as good as I can. The 4 per try, 100% for each try and +2 on every try are not common, they are RNG. Maybe, if what you say is correct, you could put up a picture and explaining what I need to do to get it visible?

These feature always show on either the target line of the node or the normal loot window as buffs or percentages. They also always show the prerequisite, if present, to obtain the bonus.
On timed node I have seen +2 hits and/or various Quality up to 100%.
If at anytime the skill required is not met, either by Gathering, Perception, or GP, then while the bonus is visible, you do not get the buff to the node and don't get the benefits. -

The ones on the target line are the standard bonuses that are always the same for the specific nodes they appear on and show up if the bonus appears. This is why it appears on the target line for that node, and also why you tend to get the same bonus on a given node.
The ones that don't show up on the target line are truly random and can appear on any node. The reason they don't show up on the target line is that they're not tied to the node in question and thus only appear in the bonus section of the gathering window. This is also why you will sometimes get a different bonus than the one specific to a given node. -

A large complaint a lot of new players have in this game is that there's too much visual stimuli. Being an MMO it's almost needed. I'd personally say there isn't enough.
But there's been active efforts to minimise the visual elements on the HUD and otherwise. If everything was in large bold capital letters, flashing across the screen in marquee, then nothing would stand out. So there's got to be some elements that won't end up in the foreground as much as others. This just happens to be one of them. I don't personally agree with every design choice they made, the enmity bars that people constantly miss should have more attention to them, for one example. Perhaps how much enmity you have compared to the others in your party isn't important to you, so you focus on this gathering bit. That's good! But like all visual information the game provides, once you know where to look it's hard to miss again. It's not exactly a problem that ends up repeatable. -
