How does dungeon loot work?

Are items locked to particular bosses/chests... or are there just random chances (IE, boss A) can drop item X from set Y, while boss B) drops only aetherial loot)?

I've been trying to collect the infantry "set"...

... and while I've successfully gotten the boots and the chest, I have yet seen the gloves or skirt. I know in Brayflox's Longstop, in particular, there are several side-chests in the run (a couple of which are typically skipped). Do the items have a chance to come out of those, or just the bosses?

Only the bosses will drop those pieces. You may find pink aetherial armor in chests but no set pieces.

Specific bosses drop the various pieces depending on which slot it's for. I know bodies and legs drop specifically from Aiatar at the end, for example (these armor pieces tend to carry the most "weight" stat wise, which is why they also tend to cost the most tomestones, just short of weapons)

So depending on what you want exactly, you may not need to run the entire dungeon.

There are two ways to avoid queves, but 1 is doing it with undersized party and with no level sync (work even if you have 4 people), and the other is a GC thing that might not be available to new players. Unless you got some high level friends helping you, you likely won't need the gear for the stats by the time either becomes viable.

If it's for glamour purposes, there is a level 49 version of that set that's dyeable you can craft/buy off the marketboard (you also get them through the ARR questline now too):

I don’t think there was (unless it’s in pvp) there is variants like Royal Volunteer set from Saint Mocianne hard. And the Sky Rat set to a lesser look.

Sadly not.
There is another none-dyable set of that gear in blue but it's for healers at 70.
