I am back to the game after being more than 6 months without logging in. My question is, how is it the tank meta after 3.2? How are all 3 tank jobs doing in the raiding scene?
I have also seen some changes in the vit and str stats. I would appreciate if I could get some kind of chart with the new stat overview comparing str and vit. Also, based on what I have read until now about this fact, I am guessing vit is better than str now, or is there any kind of equality in both stats dps output?

You can clear anything with everything.
Vitality and Strength grant .45 attack power each. (.9 AP per 'point' compared to everyone else who gets 1 AP per 'point')
You can't 'overmeld' primary stats anymore. (Green slots okay.)
Tanks in general have lost close to 20% of their attack power compared to before. (Give or take 2-3%)
This leads most to meld Strength onto vitality accessories.
Parry is still garbage.
It's generally accepted that it's not worth giving up Vit for Strength based on secondaries. -

For left side of the gear, melding Det/Crit seems to be still a top-fashion, while melding STR for right side of gear has become a static, reliable source of little dps increase (just like ^ Kabooa mentioned)
You can now farm weekly materia Grade V from Void Ark runs to meld new Allagan Tomestones gear. The drop is guaranteed for everyone, so no rolling. You can exchange Dark Matter for materia in Iddylshire at goblin near aetherstone. Direct <flag> will be given to you in shout, it will be less complicated than remembering numbers if i give them here.
You can also farm materia Grade IV from ARR daily beast tribes, but i don't know, if it is something new for you.
For basic stat allocation, buy Hymn at your GC and relocate all into VIT for best performance.
I confirm, that around 20% of actual attack power is lost since 3.2.
Tank stances are now generating additional aggro, so for low-level dungeoning it has become a struggle to clear content, thou its nothing horrific, you just need to use flash/overpower/unleash 3-5 times more. -

If you intend to do Savage content to get the drops and the upgrades for Lore armor, I personally wouldn't bother wasting tier V materia on your gear until it's 240. Similarly, I don't waste tier V materia on prototype Midan gear. In any case, don't bother trying to cling to the STR meta in a misguided attempt to squeeze out more DPS. You will get your face bashed in even in Midas Normal because things actually hit really friggin hard now, and STR/VIT have the same stat weight toward your Attack Power anyway.
All 3 tanks are viable for endgame now. There's a preference toward having a warrior (slashing debuff) but DRK vs PLD is pretty much a wash. PLD has slightly lower DPS, but the gap isn't as huge as it used to be. You can do it easily with either one. -

One thing that may be important to note is that if you're coming back and you're ilvl 210 you will see a significant difference in your damage output due to the changes, HOWEVER it will return in roughly 10 ilvls and increase from there. At least from warrior (haven't really tested with the other 2 jobs but I'm sure someone else can confirm) I was back to doing the same amount of damage around 220 and at 226 I'm roughly doing 120 dps more (of course, I'm throwing grade Vs on everything I get so your mileage may vary). I only mention this because it was a huge upset for quite a few people (me included) when the change happened, but don't worry, it does get better.

You can definitely still tank outside of tank stance. Dungeon length is only slightly longer and once you reach 225-230 you'll be back to where you were before.
