I really don't see how this is an issue. Sellers have the option today to sell single items or stacks of items. If I put something up in a stack, that is how I want to sell it. Can you walk into a grocery store and crack open a 12 pack of your favorite beverage to pull out a single bottle or can?
Not to be contrary, but at my local Coop, one can in fact purchase "singles" from alcoholic and non-alcoholic six- or twelve-packs. The individual price is even marked on the shelf alongside the pack price. With that said, I think the current market system in FFXIV is counter-intuitive and doesn't adequately detail to the prospective buyer what he/she is looking at. When the buy window says, "Purchase one foozle for 200" but I actually get _six_ foozles, that's not what I was looking for. Sure, I could increase my reading comprehension or something, but I generally consider myself a reasonably smart fellow, and if it confuses me, I bet it confuses other people too.
