Just a quick edit because I'm not sure people read past the first line: This thread is not about confirming if we get to remake our character. This is about when it happens.
So everyone I've been thinking. I'm fairly confident that we will get to remake our characters with the release of v2.0. I can't remember if its been confirmed exactly or not (I'm quite lazy and don't keep up with all the patch notes) so I won't say it will be. However, I was wondering if it is how this should be added into the game or if its even worth thinking/doing something about. I'm not sure if there have been any plans like this, but I just would like to know what would you like to see happen.
Would you like it to just magically happen when you log in one day? How about talking to a certain npc and to be granted a single ticket (maybe the ticket should or shouldn't have an expiration) you can use to take you back to the creation screen. Perhaps there should be a quest involved? Maybe as the new world is being formed so will we? I'm not sure. There could be a nice cutscene or event that could happen. Maybe we can become a spirit (or zombie) for a certain time until we can obtain a new body!? Maybe you wish nothing at all to happen. Just trying to make a conversation. I apologize if this has been discussed already. ; ; I could find nothing of the such.
tl;dr - When v2.0 happens how should we be able to create a new character?

Oh and as far as the other part to your post Rem, maybe adding the chocobo in finally. I was gonna suggest maybe the display main off, but then I thought about it and remember people complaining about that and how it doesn't fit lore or something. Haha. I'm sure there may have been someone who said "Oh I don't like the chocobo cause of how it was added in. You could just buy it instead of quest for it like in 11."
