My hat and a tunic bound last night while I was fishing. I don't understand what that means.
Once you gain the ability to convert equipment into materia (unlocked by lvl 19 quest "Forging the Spirit"), you'll be able to make materia from gear that has reached a 100% spiritbond. (It destroys the equipment itself in the process, so it's a way to dispose of gear you're done with and get something useful in exchange.)
If you get a crafting class to level 19, you'll then be able to take that materia and add it onto other gear to improve its stats. (Or if you aren't doing crafting yourself, you can request other crafters to add materia to your items for you.)

I just don't understand why spiritbonding occurs with un-convertable items, especially untradeable items.
The armorie resets any spiritbond on items deposited into it anyway so that's a moot point. I think it's just a concession to how the game is actually programmed - that to avoid possible bugs due to the nature of the equipment system in the game, it's easier to have all gear with a spiritbond even if they're non-convertible, rather than making exceptions for 'non-convertible' gear (much like how the Soul Crystal has an item level of 30 yet doesn't contribute to your average item level)
