Just can't decide
I keep making a character and deleting the character, switching between servers and races and starter class. I just can't ever seem to be able to choose one thing or place. I'd like to find a server with a decent population, maybe a fun social linkshell that can help me out learning some crafting.
In ff11 I play a red mage almost exclusively because I loved the buff/debuff support role thing, so I'm thinking a Thaumaturge... but I also want to be able to make food and potions (again with that support mentality in mind)
Where is a good place to head out too?

Well Thaumaturge seems a right choice for you and you'll want to level Conjurer as well for some buffs. But you know that you can switch class on the spot right? So really it does not matter, just don't pick and discipline of Hand/Land as the starter job so you start with a weapon and some attacks.
As for server, I don't know I only been on the palamecia server... why I chose it? I liked the name. So really I think you should pick what server you like, I believe Besaid has a lot of NA people, but it's inscresing on every server I think.
The race is again really up to you, what are your preferences. It does not affect ANYTHING after level... 2. :P So just play what you like (Lalafel FTW!).
To make food and potions you need to be a culunarian and alchemist which you can be once you buy the skillet and alembic from the NPC vendor (it's like 2k gil each) so after that you can start crafting. On a side note, both of those class are really under-developped and are not usefull at all as the game stands, but they will fix it.
Hope that helps you make a choice.

Just to add, for a starter city, It's not really a big deal since at rank 20 you'll be sent to Ul'dah anyways and that is where everyone is on pretty much any server but again choose with what you feel like you will enjoy. Ul'dah will make it easier for you to start since the market wards are more developped (in Grid and LL you'll have a harder time gearing up). Also, Thaumaturge's guild is in Ul'dah.

i know how you feel i did that for a while then just want back to selbina world it seem to be the most full server.

well I suppose if I want to get in with people I aught to pop onto a more busy server. I guess I'll do that and just gather stuff in hopes of making enough coin to buy something... darn 999,999,999g vendors everywhere...

The 99999999 bazaars are just people's way of getting an extra 10 inventory slots. :p
I played a RDM for ~3 years in XI (and never main healed a single time) so I think I have a pretty good understanding of the support style you like to play! :)
That mentioned, I don't believe there is currently any class that fits my desires for that support role.
THM currently is the class for debuffs, but you will certainly be healing and buffing as you will be more helpful than a 'debuffer only' and saving everyone's time.
The battle system is being reworked in the next months however, so everything can change. I would jump in just to have a foot in the door and basic understandings, and I would be glad to give advice on Lindblum! :)

Oh hey Eden I see you chatting up lots of folks on these forums. I know the game is effectively been downgraded back to beta (what with all the things broken/not working right/not how we the fans want it) but I still like it. I even tried booting up ffxi a little while ago... honestly I found it utterly unplayable... spoiled by warcraft I suppose. FFXIV is just so charming and utterly beautiful that I find myself wanting more and more. Granted I don't mind healing, it's not casting protect and shell then turning around with hitting an add mob with sleep or paralyze... yeah you know what I mean. Maybe I'll hit you up on Lindblum.
