There are quite a few possibilitys for different Tanks and Healers.
Dancer for example could be a Frontline Melee Healer, that uses TP for heals instead of MP, offers some buffs and mitgates inc Damage via debuffs on the Mobs.
Beastmaster or Puppetmaster could be a Pet Tank.

There are still possiblitys left.

Geomancer, focuses heavily on AoE zones.
Itemist, uses a system in a similar vein to Ninja to quickly mix and hold for needed scenarios.
Dancer, attacks at melee range and has dances acting similarly to bard songs. HoT heavy.
Necromancer, redistributes outgoing damage into healing skills.

Oh honey there are many jobs they could make that do more than just play burst healer or mitigation healer.

While I normally main sch, I've been doing Sam lately, lvl 69 now. I don't think I've any time yet on sam that it's been more than 10 or so minutes for a que.

As for new healers/tanks, as others have said. Almost all of the ones who change to new classes of tank/heals are ones that were already a healer or tank. Very few are dps that change over.

Also, ideas for the future. A cool tank would be Rune Fencer.

It was implemented late into ffxi's life and I think would be a great add to the ffxiv roster.

So what is SE's Poor excuse adding 1 Tank and 1 Healer made no difference to dps queues? Clearly it did since DPS queues was god awful at the start of SB. Adding 2 of the most popular job roles from FF games should of been a red flag for SE to turn and say look, lots people might play the new DPS classes and give up Tanks and Healers...but nope.

Loved playing chloromancer, it was the one healer that made me leave tanking, at least for a bit. A Reaverr style tank would be my suggestion, as it was my favorite in rift, establish hate with the sickness you spread to the enemy and heal yourself with the stolen health. Ooh yea!!

I kinda thought Dark knight would be the same as a Reaver in this game since they spread darkness and would use it to heal, while being a mp based tank not tp...but instead they just made them a Warrior with a Sword that uses mp not tp.

Remove all tank and healer jobs and turn them into bot roles so everyone can just play dps. Queue issues fixed. See how easy that was?
