FFXI had airships and teleport spells...people all still flocked to 1 city...which is how linked AHs came about.

They may allow us to buy stuff from other companies with an additional cost in seals and/or gils (like FFXI conquest item)
Oh I don't doubt people will centralize in order to have more access to markets/shouts/etc, but it's much different than picking a storyline you want to go through. ie: I pick the Gridania grand company, I go there to do business, but I still come back to Ul'dah at the end of the day.
Jeuno was the center of the world in FF11 and had airships going everywhere, the other places only went to jeuno so by design it was intended to be where everyone gathered.
If the weapons become sellable/tradable in future it would make sense to go with the least popular company and make lots of money from the people who never leave Ul'dah.
This sucks, my character is Ul'dahn and it's main melee class is pugilist, and it's main mage class is thaum, i'm in the perfect place. So imagine my surprise when my pugilist items are in gridania and my thaumaturge items are in limsa.
Seriously, that's messed up.
How about this, don't make class gear specific to one company, share the gear love. Why would any one company be gear exclusive to any classes anyway.

I too, felt forced to pick one city because of the weapons...until I realised the weapons in DH are better...and that crafted weapons are even better.
I generally don't like irreversible decisions in MMORPGs. For something major like this, there should be some way to experience each storyline / each company.
But basically what's going to happen here is since most people are in Ul'Dah, most people will join the Ul'Dah company and the other two will be generally weaker.
