Most people have no interest in it, or don't have the time to devote to getting them leveled due to busy real world schedules or whatever the reason may be. This is something that game devs really need to start taking intoaccount, as the vast majority of gamers nowadays are casual players who can only hop on for a short time in a given session. This is also why the F2P industry exists, and why it is so lucrative.
They make money off it because the stuff you can make at max level sells for millions per item (mostly because there's very little competition due to again, the majority of players not leveling the professions). Also, most crafters level gathering professions alongside them which makes the leveling process essentially free (and thus essentially pure profit from the sale of high level items).
