To which I must ask, why not have it be panoramic, and then you can fill up the other monitor with UI windows anyway?

I don't know which way would be better than the other, but the difference is largely insignificant.
Starting from full scaling to Eyefinity/multi monitor setups is the best first step, because if you have that, then you can easily downscale from it and create empty/black content where the game isn't being rendered.

With respect, I'm not sure what you were doing to make two monitors work, but in general, asking a game to increase resolution across two monitors just gives you a beautiful view to your left and right, and a nice bevel down the center of your character. Now, in the interest of full disclosure, I have not spent much time fiddling with these settings, since I prefer to leave my right monitor for things like Internet browsing and Skype anyway.
Windowed mode, off center, non-native resolution. I played around with settings until I had enough room for my chat windows in one screen and enough space left over for a browser or whatever while my main screen had my character and all the action. It took plenty of fiddling around to get things right, but worked great.
Curved monitors or edgeless monitors are the solution! Go buy one! lol
