I kind of like the idea of locking in a single craft mastery, so long as it is a boost to a craft. For example, if you could take ALL crafts to cap, but have +10-25% to success rate/quality of a single craft. You could still craft, and you could still HQ, but it would be considerably more worthwhile to stick to your "Mastered" craft. It would help a little with diversity, but wouldn't lock anything out.
The idea of "You cannot craft this sword because you are able to cook incredible foods" is preposterous; however, that "You have devoted your life to the culinary arts, so you find making foods slightly easier." isn't so bad.
