You're mixing desirable and beneficial. If there is an effect resulting from ingesting alcohol and people drink alcohol to obtain these effects, then indeed these become desirable, even if it's just for fun, or to add some challenge to whatever content.
I'm all for it, sounds like fun. I think others are just pointing out that it may not be worth it if it means that the rating is going to change. Rules are strict, and just because some people "think that it does not make sense to change the rating because of alcohol" does not make it a given
It's usually packed with a T rating. It's not gonna do much to the game already. I'd like to see alcohol introduced when we get the obligatory SAM class that was already confirmed. It'd be interesting to see alcohol prove to be a superior substitute for food, but it also comes with a drawback. a la WRPGs.

That's the typical example which could get the game a higher rating, and I'm not only talking about the ESRB, but especially about EU rating. (way easier here to get a PEGI16 instead of PEGI12 here).
The main difference between PEGI and ESRB is that you guys in the US almost never use the "Ao" rating. Only few games have it, most of them being rated Ao because of porn. So everything is being splitted either between "T" or "M". With nothing in between. Hence why certain games can get a "T" even when mentioning alcohol etc.
While in Europe, we do have PEGI12/16 and 18. 18 is widely used for all kind of games. MW3 is PEGI18. Batman is PEGI18 etc.
So games a game like XIV, PEGI12, conveying message like "drink alcohol = gets you more strength" could easily get a PEGI16 rating. And SE do not want that.
