Back in the day it'd be a problem since you needed to level other Jobs to unlock cross-action stuff.
Nowadays nah, you'll be fine.
Hi friend! There is no need to ever level anything that you don’t want to, ever. If you want to try something different, other jobs are fun and play with different options that can keep things feeling fresh…. That said, especially if you chose Paladin, you will never need anything else- it’s a great solo job for the main story and can solo a lot of content unsync’d.
There is no incentive to level more than one job unless you want achievements, more quest stories and mounts.
Despite having over 10 different jobs that you can level and a multitude of things making the grind fast, the content is designed in a way composition is nearly completely meaningless.
So yes you can do fine leveling only one job.
Level what you like; play what you like.
Being omnicapable definitely has much more advantage but it’s -not- necessarily required to enjoy your gameplay.
Give it a try whenever you feel like to—don’t feel pressured to try things you don’t want to try.

there's no necessity to level multiple jobs if you're absolutely happy with the one you have.
Unlike WoW for example, the good part about XIV's job design being so static, is that it makes easier to balance, so the performance disparity between the "best" and the "worst" is minimal, and perhaps would only matter for groups attempting Ultimate fights.
I don't like that you explain playing one job as being "casual", casuals can still touch other jobs.
But yes, you can do what you want. A lot of players usually only focus on one.
