期間限定なのは入手できる時期だけで、入手さえしていれば、

The limited time is only for obtaining it, as long as you have it you will be able to ride it in 2.0

Bit specific but how will you call it out? Like Chocobo you don't have to have the whistle where you can call from the console tray but for Goobbue do you have to use an item to call out every time?

グゥーブーは、戦闘職に関わらずレベル30以上で、特定のNPCに話しかけることで入手することができます。詳細はパッチノートでまたご確認ください。
Gobbue can be obtained no matter what class as long as it's over level 30 and talking to a specific NPC. For more details please check the patch notes.

• サイズ：チョコボとは異なり、種族に関わらず一定です。
  Size: Unlike Chocobo the size is all same for all race.
