The most important NPC in the game is a mi'qitten. All hail Khloe! Y'shtola is the best scion(for now). Hildy's quests were great, but Nasu was the real hero there. And her sister is the best Songbird. What more do you want?

Well, Lorewise Male Miqo'te are pretty rare especially the Moonkeeper ones. The women of the Moonkeepers mostly live in hidden Villages with a bunch of familys and the Sunseeker women are the breeding machines of the Sunseeker Tribeleaders. The Miqo'te you see in town either fled from theyr tribes/familys or dont have any of that for whatever reason.
Why do people always try to find a lack or an overflow of something?
Not enough LGBT, not enough Miqo'te, not enough Lala, too many Females [...]
Just enjoy the story as it is. Most, if not all of the MSQ Characters are the way they are to fit the story as a whole.
Actually in the Encyclopedia Eorzea, both Minfilia and and Yda/Lyse are listed as Highlanders (and it was confirmed by Koji). Female Highlander models didn't exist in 1.0 so that's why they don't have the typical Highlander build, but being atypical doesn't mean that they aren't Highlanders. I'm hopeful that Gosetsu will end up filling the role as Roe companion (please don't kill this one SE). I'd love to hear more about his clan in SB.

There have been a few yes. The most prominent that I remember are the Arcanist Guild leader (who likes to take enthusiastic walks across the country.), G'raha from the Crystal Tower raid, and the male m'iqote that you talk to to get Wanderer's Place HM. I believe the leader of Tailfeather is also a male mi'qote.
