There aren't any worth-to-keep items, which also can be traded.
So you will keep your gear and all used things like minions, music scrolls, etc. anyway.
The only thing you might hand over to someone are materia, crafting mats, any other tradeable thing and gil.
All of those things are not needed thaaat badly when returning, if you keep at least.. idk.. 500k or something.

You're simply burnt out. I took a short break back in April, though stayed subbed since it was only a few weeks. That helped reinvigorate my interest in the game again once I came back. Right now, I'm kind of feeling that burn out again, albeit only a little. So I'll probably dial back the daily log ins to play other games. In that case, I suggest keeping your stuff as you might feel the same. Nonetheless, we can't exactly offer advice without knowing why you're losing interest.

Now about the personal experience of quitting and returning in FF XIV:
I started playing the game during FF XIV ARR BETA. Then about mid-year 2014, I decided to stop playing. Since I knew my interest for the game was not entirely dead, I chose to give out all my possessions as a deterrent to prevent me from returning:
- my decorated FC house (that I was kind of using as a personal house)
- All the mats/shards I had collected so far from my retainer and FC storage.
- And about 18M gils.
I really did not plan to come back into the game.
But finally I have returned since end of September 2016 (so I took about a 2 year break).
Luckily for me, my old FC house has been kept alive thanks to a friend who used one of his alt to prevent the house from being demolished.
And although almost all the decos were gone, I was really happy to find back my lovely house.
Did I miss all that I gave away when playing again? Not really. Getting mats back is fast enough and gils don't really matter unless you're in hurry to buy something expensive.
Would I have been a bit more comfortable if I did not give all away?. Yeah, but that's it, just comfort. As long you keep your character geared so you can go back into action right away, you don't really need anything else.
So that's about it, if you decide to give your stuff away, I advise you to keep your character geared and something like 5000 gils at least to afford early teleport cost in case you decide one day to come back.

I'd say keep your stuff.
You really sound like you are interested in returning in the future. People say it doesn't matter that you gave it all away because it will all be worthless in the future anyways, but that is not entirely true.
I quit in early 2014, planning to never return. I did though, about a year later, and have been constantly subbed ever since. I had an absolute blast playing catch-up, but it would have been a lot more annoying and unpleasant if I had given everything away before I left.
My best friend had to recently leave the game for nearly a year for work-related reasons (travel to a different country, couldn't take more than her laptop with her). For her as well, returning was a smooth process because she still had all of her stuff.
Having the ilvl that is max at the time of quitting means you are still high enough to jump back in on a high point instead of having to start all over at 0. If you keep your Gil, you can buy crafted gear, new glamours that got introducedwhile you were away, and all kinds of pleasant things. Tier 5 materia from 10 months ago is still worth a ton and great for your gear. Etc, etc.^^

I would keep the gil just in case. You may regret it later on should you decide to return.
Myself i have similar circumstances and just log in for the sake of logging in these days it seems.

I had a friend who took a long break and kept all his stuff, then resubbed and came back on in order to give away all his gil. He never made it to Heavensward, but he bought a company workshop for us, his old FC, and gave all his friends who were online some money to burn.
Keep it, and if you decide later that you're done for good, logon during a free logon period and have a big giveaway.
