Anyway... This is really rough because so many things made the XIV zones great (better). I don't think we'd ever see places that only allowed you to get to a specific part of the map following a huge walk through a high level zone, areas only accessible by having different races accompany you, or doors that would only open following players of only certain jobs using certain skills on platforms.
a. Meriphataud mountains - Zones this large, yes please. This one is easily 4x as large as most XIV zones.
b. Ru'aun gardens - Pretty, dangerous, important even 12 years later, and most importantly home to the Sky gods.
c. Al'Taieu - Eerie, multiple entrances and exits, home to the boss so strong SE put out the greatest video strategy guide ever to "help" players, but the most important reason this game needs this zone: AGGRO FROM ABOVE (OMG UFO) AND BELOW (OMG SHARK) -These mobs were not to be taken lightly, and could seriously F you up if you were alone and weren't paying attention.
Please bring us: larger zones, open world enemies that even pose a threat at high ilvls, meaningful open world content, open world (sorta) dungeons [crawlers nest area would be cool]
I can recommend one place to you.
It is viewed from 7pm Eorzean Time till about 5am Eorzean time on clear nights.
Go to Costa Del Sol and take the boat form the docks, to the Rhotano Privateer (The place people fish for Nepto dragons.)
From there, look out to Costa Del Sol. It is probably my most memorable place in this game.
Sky, sea and dynamis
I know what you mean by "Not as memorable". Sure I like the zones in XIV, but ultimately all they do is remind me of places in XI that I loved. There's one or two epic places in XIV, but just about everything in XI filled me with a sense of awe, wonder, and possibly a little dread. Having to spend 30 minutes running between cities really hammered the terrain into your brain. I really prefer larger areas, and ideally an open world with no zone-lines. Not that I particularly want to spend 30 minutes running from zone to zone any more, but the Aetherytes make travel too trivial.
I'm ranting a little... I have a very strange love-hate relationship with XI, like most of you. :P
Only three zones, eh? I'm going to try not to pick some of the more popular choices that have already been expressed, like Zi'Tah, which I think is automatically on everyone's list... lol (And keeping in mind that dungeons tend to be instanced, and I get why they did that, I just hate how they're treadmills...)
1) Garlaige Citadel or the Horutoto Ruins: Because I feel like we're missing a good... REAL... Dungeon area in the game
2) Delkfutt's Tower: Same reason as above, but a separate entry because of the size and just overall epicness of the place
3) Palborough Mines: I spent so much time mining in this place, I loved the way the place was laid out, the twists and turns
1. Ru'Lude Gardens (with its music)
2. Hall of Gods (with its music)
I'd craft there all day. xD

As far as endgame, something like sky or sea would be amazing. Sky was always my favorite though. Loved the area and how the bosses were arranged.
I'm also gonna go with the promy zones. The memories. I loved the general atmosphere and the sense of danger. Having to sneak around everything.
For the third one, wow.., I can't really decide honestly.
Carpenter's Landing! Loved sneaking around in there and grabbing the raft with the tonberry.
And of course the ferries.
