Though just a comment on gathering, based on my experiences with mining and botany. The first selection has been said to have an effect on what kind of items can be obtained, though I don't know quite how it effects the items obtained. The second part is a hot and cold game. Each comes up with their own method for this part, but in order to successfully get items more frequently one needs to narrow down the possible locations for the hot and cold mini game quickly. Until one gets a descent method for doing so it can seem somewhat random. The you are closer/farther ones is relative to your last attempt, much closer means you are on the fringe of where the item is, when you get very close to the item you make progress towards getting the item, some do need multiple successes. You get XP and SP whether you get an item or not, but you do get significantly more when you do get an item.
The same XP and SP gains apply to crafting as well, but that system is no where near as easy to explain in typing.
Edit: Noticed some confusion regarding the leves as well. First the pictures, they represent different sub-categories of leves within the larger types of battle, field, faction, and local leves. This only makes a difference when you exchange old leves for new ones. You may have noticed when you exchange old leves for new ones, the old leves have a number and star on the right side of the exchange menu. Now what this number and a star means is degree of difference from the new leve. By exchanging the more different leves, you improve the rewards of the new one and can add more than one leve for a new one to further enhance the new one. Some things that make a leve different is the picture which represents the sub-type of the leve, and also where you got a leve from.
