I guarantee it. I promise it to you. It's roughly 4 months till Early Access to the new expansion so consider this a dead zone in the game. You will not be noticed and will just be considered as part of the group that unsubbed to avoid burnout before an expansion.
If you want to make a message, you do it on opening day, but I guarantee I will see all of you here on June 28 complaining about how long the log-in queue is.
Keep in mind, this is just the official forums. We are a tiny section of the true population of the game. We are a drop in the bucket and you unsubbers are an even tinier drop in that proverbial bucket.
Remember all this during your gamers rise up revolution.

Un-sub now, Then when you come back I can sell crafting mats for the next expac at obscene prices for even longer. Which I will be happily mining up with my female Viera!
Also I did the opposite I told them to take my money now 4 months in advance!

People can unsub for any reason under the sun, that's their prerogative. If you're unsubbing for the purpose of leaving feedback, it's only really useful if there is a place to leave your input while you cancel your subscription, otherwise they won't know why you left. If there is, then you can go for it, but I would also say this might not be as useful of a way for feedback as say Q&As, or even posting here.
In any case, you do what makes you happy. Whether you stay or go, I wish you well.

Unsubbing now would make lil to any difference. Its a content drought and out side of the last bits we get on tuesday it will be one to the expansion. Lower numbers are to expected. If you want your voices to be heard a large number would need to stay unsubbed for the first few months of shadowbringers. Im talking thousands of people, which im sorry i don't think there is enough people willing to go THAT far. Personally im neutral. It sucks for those that wanted male bunnies and a healer tho.

Keep in mind that thus far, the NA forum seems to be the only place were there's people actually outraged by these things. JP and FR forums from what I've seen don't seem to care that much about it.
The mindset is more like "ok, gender locked races. Well it's more variety than adding just one race and it make sense since people bothered SE to get specifically the existing Viera race from FFXII which from the source material featured pretty much only females." and "DNC is ranged, another healer would have been cool but it's also true that people playing ranged had only BRD and MCH. Hopefully the 3 others healer will get more attention in this expansion in return."
You can vote with your wallet if you feel you've been scammed by the compagnie, that's always a smart move if you don't endorse a behavior, but ultimately it's SE's game and their vision. I'm not sure there's an overwhelming part of the community of the game that are that bothered by those two things.
