I really enjoy reading, so I take the time to read the quests, though I didn't know that there's additional dialogue after taking their quest, I'll probably start doing that as well.
Unlike some other games I may have played, the dialogue here is well written and there's little to no grammatical errors, so it certainly gives me more incentive to get immersed into these characters and the story which for me, is part of the experience.
My first time through, I became frustrated with all the filler in ARR and skipped anything that wasn't related to the main story. Then I saw how SE made little connections with the lore and characters in a lot of those sidequests, and made a point of reading everything from there on out.
Except for the Moogle quests.
I'm now playing through ARR again, and I find that reading a lot of the things that I skipped helps bring the story and world to life.
So long as they aren't Moogle-related.
I even find the stories behind the leves in Ishgard to be rather interesting in how they relate to their culture, as well as the descriptions for many of the items that I turned in without a second thought, so I've been taking care to read those as well. So long as I don't see the words "Moogle", "mog", "kupo", or "kupopo", I'll read it.
From the beginning to end of ARR, I read all text that was given; main scenario, quests, even when NPCs speak. Now, in Heavensward, I skip as much as I can, even main scenario. I think it has something to do with my passion going down for them game.
I skip the non-special animation cutscenes and go back to read the text while I am traveling from A to B to A to C to A to D.
If it's a big story point or a special CS, say DoH finale, I will read it all.
I read the journal entries when I am bored waiting for queue.
I read every piece of quest dialogue.
Many side quests stop taking themselves seriously as the writing is creative enough to push that fourth wall. Even when they don't, if I'm to slay 6 ladybugs for the twentieth time, I'd like to at least know why.
MSQ, definitely. Side quests, mostly skim through to get the gist of it.

Like: the new job quest from dragoon, I really got disappointed! Because the story have not continued! It was new one and pretty boring. ...felt like a turorial.
Estinien is actually still obsessed by Niddhoggr Eye and trapped into a unknown dimension!
I really LOLed when he suddenly showed up in HW-Story mode!
And I skip textes if theres to much crap to read!
I dont wanna know what NPC XY is doing at freetime or what they ate last week. lol
I read all quest text and npc dialogue ...only if the characters involved in said things are ones I am interested in such as Ysayle...
I read every quest text, unless if it is a repeatable. Then I read them once and skip past them afterwards.
I love how on the box of one of the Zelda games, it says reading skill would be needed to fully enjoy the game ;)
No. In fact I made a keybind to speed clicking through things. I dpam my F key until its all gone.
Usually I like reading this stuff, but NOT when it is split across 3012 different popups each needing a click and wait...
To many popups in this game...
I read all the main story quests. Though, I have been skipping the pre-50 stuff on my alt character. I'll read some of the job quests. More often than not I will read the texts, but not always. Side quests I rarely ever read side quest dialogue due to how mundane they all are. I am not surprised that quest objectives are the same but they could at least try harder with the side quest dialogue to make it more interesting.
The NPCs tend to ramble. I like to look for lore drops because I am interested in that stuff but either I never see any or its hidden heavily in all the rambling. If the stories behind the side quests weren't always "Help thin the boar population! It's out of control!" or "Help! I dropped my mother's precious ring!" then I would read them.
Normally I am the type of player who reads all the text and talks to all NPCs. I do talk to NPCs in this game but the side quest dialogue leaves much to be desired.
Though to be fair, I have seen a couple of quest chains that did tell an interesting story.

If it's text, I gotta read it. I admit to being a text addict.
I read 99.9% of it.
