I loved Valefor in X, so I pick him. c:

I mean even Yuna seemed to adore him and she cuddled with him every time she summoned the primal.

Anyhow, my vote goes to Doomtrain / Phantom Train. He should be his own dungeon! You get on, get trapped on a ride to the underworld, and have to navigate car-by-car to find a way to stop the train. On the way, you can stop in the dining car for a spooky meal, and maybe find some ghostly allies who will fight with you for a bit!
At the end, you have to fight the train itself, stuck on a moving platform while the train's coming up behind you. Maybe there could be a mechanic during the fight where you either have to maintain your platform's speed on the rails, or slow down the train so it doesn't collide with you. Bonus points if you can suplex the train! :-P

Second choice is the Fiends of the Elements from FFIV. Maybe a whole dungeon/raid, where each one is a boss, and you could fight Golbez or Zeromus at the end..?

I'd also really like to see Magus Sisters -- either the originals from FFIV or the FFX insect-style version.
