I create them using an array of about 20 or so pictures. I start facing north, then simply take screenshots in a sweeping motion from left to right, then face south and do the same. After the initial "horizon" pictures are taken, I angle the camera up, and do the same sweeps again in order to capture the sky (keeping some of the horizon in view).
As for tools, I use a tool called Hugin (
http://hugin.sourceforge.net/) that then pretty much automagically stitches em' all together! Since the screenshots don't have aperture information though, you have to manually set that (60 degree's works spiffy). Then you just have it align....and tada!
I'm going to be hitting up Limsa as soon as I'm done here at the Ayther Extractors (oh look....a friendly headrip ogre! I wonder if he'd be interested in tea....).
