Their source is that they made it the fuck up.

definitely made up. the only preclusion we know of to learning multiple jobs aside from a given job being a lost art or otherwise restricted is the time investment necessary to learn it in the first place
Encyclopedia Eorzea: The wisdom contained in a soul crystal, however, is not so easily drawn forth - an untrained neophyte cannot simply pick up one of these gems and expect his mind to be flooded with the knowledge of advanced spellcraft and combat techniques. Without first attaining sufficient proficiency and tempering one’s soul to mirror the maturity of the crystal’s contributors, a prospective student will be denied even the slightest glimpse of enlightenment. Thus, as is the case with the more contemporary disciplines, the key to mastering the secrets of a soul crystal lies in diligent study and training.”
Yeah, the only time there's ever been an actual aetheric limitation to someone's body mentioned for a job is Summoner, where it's mentioned that we basically just can't fit a Ramuh-Egi in us.
That very same Job questline then goes on to have an Allagan machine fail to scan the WoL's aetheric density signature, which ultimately ends in failure. I personally took it to mean our aetheric levels were so unprecedentedly high that they couldn't be properly vetted by advanced Allagan tech, highlighting what a monster in combat the protagonist is. One more drop in the "FFXIV fails the narrative consistency test" bucket, I guess...
I don't think 'I took this one line in a side-story to mean this extremely specific thing about a 100% unrelated part of the game world that our character themselves would be an exception to, and when bringing it up am told that this idea of mine is completely baseless' is the game's fault.
Yeah, the computer's just doing a 'their power level is insane', coupled with... well, the fact we smashed it; generally speaking that's pretty good evidence that the smash-er exceeds the smash-ee's expected levels of strength, especially when the smash-ee starts the fight. If someone REALLY wanted to big up that line as meaning more, I would instead point to the subject of Rejoinings and soul density: The Allagan Empire reigned after three Calamities, at a time when everyone on the Source had 4/14 of a 'full' unsundered soul. We came at that thing after the seventh Calamity, with 8/14 of a 'full' soul. Our soul is literally twice as beefy as what Allagan technology was designed to expect, is it any wonder that when we came across a piece of Allagan tech designed to scan a soul, we broke its scale?
We smash the Allagan supercomputer AFTER it measures our aetheric density, so that doesn't work. It doesn't really mean anything, but I can't honestly say the "Can't fit Ramuh!" thing is all that lore-canon either was my true point. Not when it is directly contradicted by mountains worth of evidence. It's simply more likely they didn't want to go that route narratively and so the Ramuh Excuse(tm) was elected to be given.
I hope will actually get a callback dungeon of the actual Memoria and Crystal World from FF9 into a FF14 iteration in the world of darkness.
