Your choice to buy it or not it's a fact and new game plus isn't just "cutscenes and dialogue" it literally acts like you're starting the game over without quests.

1.0 is available right now, today, on YouTube. The game itself should remain buried.
Then they could use that journal we all forgot about if it still even exist in the inn rooms that let us view cutscenes from the past. That's how we viewed old cutscenes before and was part of the argument of not waiting for people to finish cutscenes "they can watch it at the inn".
Now as for recreating 1.0 cutscenes and dialogue in the NG+ mode as much as I would like that because 1.0's story was very very good that would be like creating an expansion's story because 1.0's story wasn't short if you recall playing it; but those fights were epic and extremely challenging; partially due to the latency but also due to the fact that you had to be geared to the teeth to even beat Darnus at the end.
I'd love to see 1.0's story first hand since I never got the chance to. Maybe as a standalone RPG or something? They could market and sell the crap out of that if it had single player RPG mechanics and the like.
Let me say it louder for those in the back. The story and lore shouldn’t be buried because 1.0’s engine was shit. The has nothing to do with carrying over old gameplay. And as I said primarily, YouTube is living it vicariously, I’d like to have this literally very small chunk of story on the new system where it belongs. YouTube is not a preservatorium for videos- anything can get deleted per chance and it can be lost forever.
I actually cannot fathom how you'd recreate the 1.0 cutscenes in the current cutscene engine, for one thing. Look up, say, the Gridania starting footage, where you have Yda and Papalymo (and your player character) being chased by a hungry tree; tell me this is something the current cutscene system -- which is largely scripted /emotes and walking-paths -- is remotely capable of.
(For all that 1.0 had a lot of problems -- and I mean a lot of problems -- the quality of the cutscene animations was not one.)
But beyond that, the truth is that save for a handful of things -- Minfilia's backstory, if you started in Ul'dah, etc. -- the only stuff that's significantly relevant to A Realm Reborn and onwards is the final storyline -- the lead-up to the battle at Carteneau Flats. The fight against Nael van Darnus, all of that. And even still, the part of that which is really still relevant is the Calamity itself, which was merely the closing cutscene before they shut the servers off -- and which is well-preserved in cinematics, and has been covered extensively in flashbacks.
Sure, there are some interesting little references -- the reporter involved with the Rising was a GM character who actually was present in-game and interacting with folks at the end of 1.x, the nameless elezen Ascian who appears in a blink-and-you-miss-it moment in the backstory of the Alexander raids was Travanchet who we haven't otherwise seen since 1.x, etc. -- but for the most part, there's little lore to be gained from 1.x that we don't already have covered elsewhere in the game already.
And while I wouldn't actually mind revisiting some of those scenes, they'd almost certainly have to be recreated entirely in the current cutscene system. And remaking chunks of the 1.x storyline for the Luminous engine seems... honestly, not like the best use of time. I think most people would like to go forward rather than back.
Now, that said, they did have a duty -- "The Calamity Retold" -- as part of the Rising back in... 2018? I think? Anyway, that let you participate in the defense of Ul'dah (a thing that actually happened in the final days of 1.x), and I feel like that could be brought back to let folks participate somewhat in the final part of 1.x. Especially since, y'know, that one's already developed and all.
