I'm of a mixed mind on this. Having something that's so easily done and pumps a ton of money into the economy can easily cause issues, there's no disputing that. However; as ItMe mentioned, leves are an excellent means for people who enjoy crafting, but don't enjoy dealing with the market, to get a reward for leveling their crafter(s). On top of that, with the two Gillionaire achievements, having a leve that lets people earn a fair amount of Gil on a regular basis is a good thing. They're also a solid means of letting people earn enough money to buy big ticket items such as houses when they become available. What I call "silly/stupid goals" that someone enjoys working toward, is more about the journey/process than the result, and doesn't give tangible rewards can be a significant motivator to keep playing. Perhaps someone wants to max out their Gil, but doesn't want to play the market; they can do leves to slowly work toward that goal and enjoy the process.
I also agree that past a certain point Gil is essential useless if there's nothing to spend it on. I've got enough to buy a small house and decorate it to the hilt, but if I can't buy a house it's pretty much useless at that point and just sitting there rotting.
A good compromise might be to leave (leve?) the current Crystarium leve rewards as they are and make changes to the new ones to help curb even greater potential issues that the need for ever-increasing rewards with new content can create.
